Chicken with Asparagus and Roasted Red Peppers

I had high hopes for this one as we love chicken and asparagus but it was not that good and I wouldn't make it again. Sorry I bought the fresh asparagus and the roasted peppers and put them in this recipe. They would've done much better on their own as a side dish.

B.L.T. Salad with Basil Mayo Dressing

This was a big hit with all the family! I thinned the dressing with a bit of fresh lemon juice and added more bacon. I also mixed iceburg lettuce with the romaine at the urging of my grandsons. I gave the recipe to my daughters so they can make it themselves. Note: For my vegetarians, I left the bacon out and gave them the option of using the soy bacon bits.

Cajun Style Meatloaf

Very good! I used half ground turkey and half ground sirloin and no sausage, The turkey made it very tender and not at all hard like some other mestloaves.. I served fried potatoes and onions on the side. It was great and not too spicy to us! Will definitely add this to my menu

You've Gotta Be Kidding Onions

I just made this (again) for a party my son had for his office. This time I put everything thru a food processor and garnished with chopped green onions - he said it was a hit and I had to send the recipe to work with him so copies could be passed around!

Hearty Vegetable Soup

O.K. - how did you get my grandmothers recipe? I haven't made veggie soup for years as my late husband didn't like it. I had an urge for some (we've had dark, cold days this week) so I made it! I used home made beef stock for the base instead of water, stewed tomatoes for the diced, barley for the rice, black beans with the garbanzo. I chose to use frozen veggies because of their flavor and added limas, string beans, garlic, shredded cabbage and some fresh asperagus. Today when I re-heated it, I added a can of beef broth to make it thinner. This is the best veggie soup I've had in years - Thank you, Colleen! Now I'm off to freeze some and send some over to my grandkids.

Marinated Cheese

This was very good served on Triscuits! I'm thinking that next time I make it, I'll try mozzarella cheese and balsamic vinegar. It's a keeper for sure.

Garlic Creamed Chicken

I just fixed this for dinner and it was a hit! I used Cream of Celery soup as it was all I had on hand. Served it over egg noodles and there were no leftovers! This is a keeper!

Absolute Mexican Cornbread

This is the very best cornbread I've ever made! I, too, cut back on the butter and sugar the second time I made it and it was just as good as the original recipe. I did add more chili peppers and some regular frozen corn along with the creamed corn. My family likes the moistness and softness of it so much better than the dry, crumbly cornbread we've always eaten. Thanks!

Beef, Green Chili and Tomato Stew

I used Pam Butter spray on one batch and Pam garlic spray on another - then seasonings of my choice. The spray cuts down on the calories and keeps them crispy!
