Zucchini Brownies

Very moist and delicious! I made mine vegan by replacing the margarine with a vegetable-based butter (Earth Balance) and the milk with original almond milk. Totally cholesterol-free with no animal products! Awesome recipe.

Easy Baked Tilapia

Definitely an awesome and easy weeknight meal. Use prepacked frozen tilapia filets and you're good to go! Also, Old Bay isn't the only seasoning you can use. I used Everglades All Purpose Seasoning (aka Monkey Dust for you Floridians out there) and it was very tasty. I might try plain old Adobo seasoning next time. Still, this one's a keeper!

Quinoa and Black Beans

Absolutely delicious! I used chicken broth instead of veggie broth (it was what I had on hand) and I also used Bush's Seasoned Black Beans. I drained them but didn't rinse. I was worried it may be a bit bland, so the seasoned black beans may have saved the day. Regardless, this is a super easy, delicious, healthy recipe. HIGHLY HIGHLY recommended!

Fish on a Plank

Wonderful and easy dish! I wanted something quick and easy, so I didn't make the salsa. I marinated frozen tilapia filets from Costco in the teriyaki sauce with some crushed garlic, then I sprinkled the filets with lemon juice and Mrs. Dash Chipotle Seasoning ( left off the pepper flakes and hot sauce) before cooking them like the recipe said. I topped it with fresh cilantro and served with salad and quinoa. Absolutely devine!

Actually Delicious Turkey Burgers

Great turkey burgers! Not too oily, probably because of the lean meat. I used scallions because it was all I had, and it worked wonderfully. We put em' out on the grill. Make the full batch and stick the extras in the fridge for lunch the next day!

Pan-Fried Asparagus

I never change a thing whenever I make this asparagus - perfect as is. However, I can understand why some people would think it's too buttery. I've never been a vegetable lover, so I need my greens soaked in SOMETHING so it's palatable. An 1/8 cup of butter would still work well. Happy cooking!

Vienna Schnitzel

EXCELLENT recipe. Whenever I come home from school, my parents beg on their knees for me to make them this schnitzel! I recommend using crushed saltines as bread crumbs, but because they add some extra saltiness, adjust the rest of the salt accordingly. Happy cooking!
