Chicken Piccata II

Positively delicious. I am a lemon addict, so I added two extra tablespoons of lemon juice. It made all the difference. But even without the extra juice, it's still scrumptious! This is fabulous!

Pineapple Cracker Spread

My family and I loved this! Even the kids that are more uneasy towards new recipes tried it and kept revisiting the bowl again and again! I didn't have fresh green onions, mine were all frozen. So it dulled the flavor in that department. But to make up for it, I diced up a quarter of an onion and used a garlic mincer to turn it into something like a pulp, and I added that to the spread. I also added a bit of salt. Maybe half a teaspoon. That enhanced the flavor as well. This was great!

Whipped Cream Frosting

This was AMAZING. I was trying to find a frosting that would compliment the flavor of my angel food cupcakes, and then I came across this recipe. I put the frosting into a pastry bag and piped it onto my cupcakes in swirls. I actually started giggling because they looked so perfect and tasted so good. This recipe is definitely a keeper. =D For the record: (I used heavy whipping cream) I whipped the cream in my KitchenAid mixer on the highest speed with the whisk attachment because I couldn't find my hand mixer. It turned out nicely. =)

Gourmet Sweet Potato Classic

FABULOUS! This had become a Thanksgiving tradition in my house. =) My dad really loves the marshmallow-topped kind, so I always leave out the pecans and replace them with marshmallows on top. I bake this for 30 minutes like the recipe says, but then I turn on the broiler and toast the marshmallows a little more. The added crunch creates extra awesomeness!

Sloppy Joes

Superb! My family loved this. Now every one of the kids perk up and get very excited every time I say, "I'm making sloppy joes for dinner!" This is much much better than any other sloppy joe recipe I have ever tried.

Toscana Soup

Out of all of the Toscana recipes I have ever tried, this one is by far the best. I loved the result that came from following the recipe exactly, but the last time I made it I used 1 cup of cream instead of 1/3, and a whole 14 oz. can of chicken broth instead of 2 tablespoons. (Not because I thought that would make it better, but because I had to use up the cream and I was too lazy to store the rest of the chicken broth. Haha!) Still good!

Best Lemonade Ever

I poured the sugar/water straight into the pitcher without allowing it to cool first. (I'm too impatient! lol) Instead of adding the remaining 7 cups of water, I put in 6 cups and replaced the last cup of water with two cups of ice to cool it quickly. This is truly the best! I usually avoid lemonade at parties and other social gatherings because it's ALWAYS bland, but this lemonade is super sweet! Just the way I like it. =)
