Coconut Macaroons

These are very tasty! In the spirit of spring and easter I made them into little nests and nestled a Cadbury egg in the center of the coconut. I then sprinkled a bit of cocoa powder over the top to give it a tinge of chocolaty brown color. When they baked the chocolate Cadbury egg cracked a bit so it looked like a chick was hatching. They looked totally adorable. I suggest this snazzy touch for easter and spring parties- it might also be a cute, sweet addition to a baby shower. Best Chocolate Chip Cookies

Colleen's Slow Cooker Jambalaya

I though this recipe was pretty good and my boyfriend loved it. I added a few more veggies than suggested and omitted the parsley as I did not have it on hand. I would suggest using raw shrimp and cooking them as opposed to already cooked frozen shrimp as they got kind of tough. Thanks for the recipe!

Quick and Easy Brownies

Yum! These were just the right mix between cakey goodness and chocolate bliss. I added walnuts and chocolate chips and they were amazing. Thanks for this recipe I will totally make it again soon!

Chuck's Favorite Mac and Cheese

I made this for four teenage boys and it was devoured with complements! They always eat a ton but they hardly ever note the flavor. It tasted fantastic. I made it twice and used ricotta once and small curd cottage cheese the second time and I think I preferred the small curd cottage cheese. Thanks for the awesome mac and cheese!

Mexican Casserole

This is a classic in my family though we use corn tortillas and more green chilies. Ironically it's kind of an American classic as opposed to a Mexican classic. : )

Florentine Artichoke Dip

People loved this at the party I made it for. I used "light" or "fat free" everything and it was still very creamy and delicious. I also put it into a bread bowl on presentation. : )

Pesto Cheesy Chicken Rolls

This was nice. It was very easy. I made a slight change. After I rolled the chicken up with the pesto and cheese filling, I rolled the chicken in beaten eggs and then in a breadcrumb and parmesan cheese mixture. It was really good and very simple. Thanks!

Rita's Eggs Strata

This was excellent! Made it for a holiday brunch and it was a hit! Although it has a lot of cheese, the cheese is not overwhelming. I suggest pressing down the strata with a spatula after you assemble it to make sure all the egg/milk/spices etc are absorbed by the bread. Thanks for this recipe!

Busy Day Chicken

Super easy and very good. I added 3/4 can of Coke and a large white onion (roughly chopped) to give it some more flavor. I cooked it for 8 hours on low and the chicken was sooooo tender it literally fell off the bone. My one suggestion would be to have another jar of barbecue sauce on hand to add to the chicken if you really want it to have a barbecue flavor.
