Cajun Seafood Pasta

This was pretty good. Definately not a "seafood alfredo" type dish.. it was more just a spicy sauce to go over the pasta. I left out the white pepper (after reading the other reviews) and used alot of mozz/parm cheese and a little nutmeg in the sauce. Its pretty good.. just very hot! We thought it was a little too cajun for a pasta dish. I'll try this again and maybe leave out the cajun seasoning and try to make a creamier more alfredo style version of this.

Mini Pineapple Upside-Down Cakes

Wasn't impressed. I'm a big fan of pineapple upside down cake and these fell short of my expectations. Maybe because I'm partial to my moms homemade from scratch version.. which is declicious and sweet and the cake is drenched in brown sugar/butter flavor. The presentation of these were cute.. and they tasted sort of like the real thing... it just wasn't something I'd rave about or try again. I actually made these to take to party, and ended up leaving them at home =(

Baked Ziti I

Excellent. Made recipe as is (took advice of fellow reviewers and I did mix the noodles and sauce together before layering) However, the provolone and sour cream in this dish just gave it such a hearty and rich feel.. it was delicious. I urge everyone to try this recipe as written.. it is amazing and my company thought so, too. Will definately be making this again!

Restaurant-Style Potato Salad

Awesome! This truly is a great cold potato salad. Great flavors going on in this dish, and is a great side to lots of summer meals. I omitted the carrots and pimento's due to preference, and doubled the mustard. Also added a few hard boiled eggs. I will use this recipe from now on every time i make potato salad. =)

Angela's Awesome Enchiladas

Absoultely delicious! A little time-consuming, but so worth the wait. The filling was so good. I followed the recipe exactly as written, but omitted the olives (per preference) This by far exceeds any echilada recipe I've ever tasted. Like other reviewers, I agree that using a good authentic quality enchilada sauce is the way to go, otherwise a cheap canned variety sort of trumps all the wonderful flavors going on in the filling. This will be printed and put in my recipe book! =)

Cheesy Mexican Cornbread

This was a bit softer and more soggy than usual cornbread. The flavor was alright, but like the other reviewer stated, I missed the hard, sort of crunchy bottom that regular cornbread gets. Not sure i'd try this again.

Weeknight Lasagne Toss

Wow!So much faster than the usual layered lasagna, but tastes just as good if not better! I was honestly impressed. I threw in a small can of mushrooms,diced up an onion also.. and I did the extra step with ricotta cheese (I think this is what makes the dish so great) I will be printing this, and keeping it in my allrecipes binder for continued use!! =)

Spaghetti Salad III

Pretty tasty! I used farfalle noodles (bowtie) since I think they hold sauces better. I also threw in some deli salami slices, and used shredded asiago cheese instead of cheddar. Tastes awesome if you let it sit for a while before serving. Will make again!

Slow Cooker Kielbasa and Beer

Although i'm not a huge sauerkraut fan, this was pretty good. I too read other reviews and decided to brown the sausage for about 5 minutes first, then add some sauteed onions and garlic. Used 2 cans of 14oz sauerkraut instead of recommended amount (didn't seem like enough) Coors Light beer, a splash of dijon mustard, splash of honey, and simmered on low for about 5.5 hours. Pretty good!!

Cheese Garlic Biscuits II

5 stars! These really do taste so similar to the famous RL restaraunt. I added onion powder,parsley flakes, and a little garlic salt to the dry dough mixture. Like other reviews state, definately don't overmix. The dough is very sticky and sort of hard to work with, but they came out light and fluffy and declicious! Will definately try these again. I will double it though, these only made about a dozen- and that just wasn't enough to go around!

Lemon Coconut Squares

I'm a big fan of lemon baked goods, however these fell a little short. The coconut added definate texture and flavor to the lemon, but overall the filling was sort of mushy, and I didn't wait for the crust to cool (as the recipe didn't instruct to do this) and everything sort of melded together, there was no separation between the layers. I wouldn't make these again.

Biggest Bestest Burger

Definately a 5 star burger. I did add an egg to the mixture, as some reviews said these were falling apart while cooking. The result was awesome, these were so moist and flavorful. Next time, I would use maybe 1/2 of an onion instead of a whole one- it seems a little too much considering there are so many other flavors going on. I used roasted garlic teriyaki sauce and topped these with swiss and american cheese. Excellent! Can't wait to make these again.

Southwest Chicken Quesadillas

These were pretty good. I used Tyson brand pre-cooked chicken cubes and followed this recipe exactly, but omitting the cilantro. I used a quesadilla maker (very quick and easy) The flavor was pretty good, but like some other reviewers stated the amount of salsa was too much for the filling and sort of overpowering, next time I think i'll try cutting up fresh tomato and peppers and onions rather than salsa. Overall a success!

Slow-Cooked Chili

I followed this recipe exactly only without the kidney beans (because i didn't have any) I have to say it did not take on a chili flavor to me, it tasted somewhat like a sloppy joe or meatloaf. Maybe the beans are what makes the chili great. I will be looking for a better base chili recipe. =(

Sausage, Peppers and Onions

Another 5 star recipe on AllRecipes.com in my opinion! This was so hearty and delicious- tasted like a real comfort food. I used Ragu brand roasted garlic and herb sauce, since the store didnt have tomato basil kind- and I added fresh basil and extra garlic cloves the sauce myself. I used a mix of hot and sweet italian sausages and cut them into 1 inch pieces after browning, then threw them in the pan with the sauce and vegetables to finish cooking. I served this on large asiago cheese dinner rolls. What an amazing dish! Will definately make this again, and try it with penne pasta also =)

Fried Onion Rings

Wow! I was skeptical, since restaurant and pub style onion rings are always so great that attempting homemade ones may turn out less than desirable. These were amazing! I just heated 1 qt (4 cups) canola oil in a deep skillet- and for the batter I used Coors Light Beer and threw in a little extra pepper than what the recipe called for and also added Weber Grill seasoning salt. They came out puffy and crispy and golden brown delicious! Tasted like those you can get at carnival's and state fairs. Will definately be making these again, and also I think this exact recipe would be a phenomenal batter for shrimp- will be trying that also! =)

Easy Lemon Cake Cookies with Icing

These were great! very light and airy. I will add that putting the cookies on foil- covered sheet pan did not exactly work, I just lightly sprayed a cookie sheet with cooking spray and baked exactly 10 minutes- 8 minutes and the cookies were still gooey and falling apart. To me, lemon extract is a little pungent and over the top, so for the glaze i just used vanilla in place of the lemon extract. Excellent! Will definately make again.
