Herb Turkey Rub

The wonderful smell of this rub coming from the oven made the wait for the Thanksgiving turkey sweet torture. So worth the wait! Grocery store was out of fresh thyme, so I substituted dried. Made the recipe 24 hours ahead to allow the flavors to mingle. Otherwise, wouldn't change a thing. Fantastic.

Dutch Apple Pie with Oatmeal Streusel

Homemade Flour Tortillas

Followed recipe, but used Kitchenaid mixer with dough hook to mix dough. Kneaded by hand. The tortillas rolled out beautifully, with the help of my nine-year old sons. Results were delicious and tasted straight out of our favorite Mexican restaurant. Just try not to sample one hot off the grill!

Slow-Cooker Corned Beef and Cabbage

Leave the knives in the silverware drawer, you won't need them! Absolutely delicious. Used 2 bags of frozen stew vegetables to save time. With a loaf of Irish soda bread, it made the perfect St. Patrick's Day meal.

Kosher Salt Encrusted Prime Rib Roast

Out-of-this-world-delicious! Left-overs were even better. I was concerned that the low/slow cooking method would take forever, but 6 lb rolled rib roast cooked perfectly in just over four hours - warm and pink throughout. Meat was fork-tender, juicy, and literally melted in my mouth . Next time I hope to try additional herbs under the salt coating. Salt on the bottom of the pan absorbed all the drippings, but clean up was as easy as rinsing out roasting pan.

Restaurant-Style Prime Rib Roast

Made this for Christmas Dinner. Followed directions to the letter, and it came out brilliant. Crust was not as tasty as some prime rib recipes, but the meat was so tender and juicy. High temp and flour created a seared crust that retained moisture and flavor. The six pound roast took longer than the estimated cooking time, but in the end, it was well worth it. Roast ends were well, while center was hot and pink. Relative fought to take home two leftover pieces. I'll take that kind of compliment any day.

Grandma's Peanut Butter Fudge

My grandma gave me her recipe for peanut butter fudge before she went into "the home." It never worked because she wrote it down incorrectly (on purpose, I think). I was so happy to find this - it is perfect, and instantly carries me back to childhood. Makes enough to share, which you'll want to do because it is addictive! I'll even send some to Grandma.

Orange Pecan French Toast

I have made this for Christmas morning two years in a row. The sweet smell of orange and cinnamon filling the house is (almost) enough to tear the kids away from their toys. Absolutely delicious with real maple syrup!
