Mexican Chocolate Cake

Reviewed: Jan. 25, 2011
Very moist, nice not-too-sweet flavor. We did change a few things, of course. Used butter instead of margarine, and I used 1/2 c. of milk with vinegar in it for the sour milk. Instead of adding a cup of water, I used 1/3 c. water and about 2/3 c. strong brewed coffee. I did add a little extra cocoa. I had a little trouble getting it out of the pans, I used round cake pans, so maybe next time I'll follow directions to use a 12x18. I'll be making this again and again, it was delicious.

Kay's Shortbread

Reviewed: Nov. 7, 2010
I read reviews and substituted 1/4tsp almond extract, the remaining 3/4 tsp vanilla. Next time I'll follow the recipe, the texture was fantastic. I baked it in a 9x9 pan since I didn't want the wedge shape, came out great. I will be making this again and again, the family loved it.

Curried Shrimp Bisque

Reviewed: Nov. 30, 2009
It's on our favorites list! Like some other reviewers I left out the brandy, 'cause I don't have any! I cut the shrimp in the soup into spoon-sized portions. I also used half and half instead of light cream, and omitted the green onions since my hubby doesn't like them. The whole family including the picky 9 year old liked this one. Thanks!

Chicken Tikka Masala

Reviewed: Dec. 1, 2009
Holy moly it's good! The day I made it it was pouring outside and I couldn't grill the chicken as it instructs. So I just cooked the chicken on the stovetop in a pan, draining as much liquid as I could as we went. I didn't use any jalapeno peppers because we don't really like it, but added a little cayenne to make up for it. Instead of heavy cream I used half and half, thickened nicely. My kids beg for this one.

Pecan Pie Bars I

Reviewed: Dec. 27, 2009
These were great, I've made them twice. What I did differently that worked better? The 1st time I made them the filling ran under the crust and made about 1/4 of the bars inedible. So the 2nd time I made them I made a 1 and 1/2 recipe of the crust and made sure it went up the sides of the jelly roll pan to keep the filling on top. I do like crust so a little extra wasn't a problem for me. (I used parchment paper underneath both times). I also used walnuts instead of pecans (it's what I had on hand), and called them walnut tart bars, or something like that. Everyone at Christmas parties and at work loved them!!!

Beef Barley Vegetable Soup

Reviewed: Dec. 27, 2009
Made it twice now, it's a nice hearty soup. I used beef stew instead of the chuck and then tore it into shreds once it was cooked. I used beef broth instead of the water and bouillon cubes, made it nice and rich. Everybody ate it up, delicious.

Hot Cocoa Mix in a Jar

Reviewed: Jan. 18, 2010
Nice and thick and rich. Make sure to use the cook and serve pudding. I made the mistake of getting instant with the first batch I made and it wasn't nearly as thick as with the cook and serve. Thanks for sharing.

Valentino's Pizza Crust

Reviewed: May 19, 2010
I enjoyed this recipe, been making my own crust for some time but this recipe comes out softer and is much quicker than the last one I was using. I did substitute 1 c. of whole wheat flour and decreased the AP flour to 1 1/2 cups. Thanks for sharing.

Whole Grain Waffles

Reviewed: Sep. 16, 2010
I did some substitutions the first go round with this recipe, since I couldn't find the flax seed meal at the store. The family loved them. I did find the flax for the second go round and they were YUMMY too!! Even my husband who avoids good-for-you foods loves these. I didn't use whole wheat pastry flour, just plain WW flour. Very delicious, thanks for sharing.

Beth's Chocolate Chip Cookies

Reviewed: Jan. 25, 2011
Held their shape, nice texture and taste. I used mini chips and walnuts, I think the mini chips are a nice way to go. Yum.

Brownie Frosting

Reviewed: Nov. 16, 2011
Yum. It's in my "hand it down to my kids" book of recipes now. I frosted a 9x13 pan of brownies with 1 recipe, it's not as thick a layer as what is in the picture but I thought it was plenty enough. I used half semi-sweet baking chocolate, half chocolate chips (because that's what I had) and it seemed to turn out just fine. Everyone raved about it, thanks so much! (BTW, it's even better the day after you make it)

Rempel Family Meatloaf

Reviewed: Jan. 25, 2011
My meatloaf-hating husband ate this (he also hates onions and peppers and all kinds of other things...). He actually ate his whole piece that I served him, and had no complaints other than the onion soup was just a bit too much. Next time I'll put in less of that, but otherwise it was yummy.

Cranberry Sauce

Reviewed: Nov. 22, 2012
This had very good flavor, I thought, but I wanted it to be a little thicker. Next time I will use less OJ and possibly simmer it a little longer.

McCormick® Gingerbread Men Cookies

Reviewed: Dec. 21, 2009
Honestly I didn't like this version as much as my Better Homes and Gardens version. Yes, I did make the cookies, they came out OK, but nothing spectacular. And I felt that the dough from the other recipe was even easier to work with. Like I said, the cookies did come out, but I won't use this recipe again.

Belle's Hamburger Buns

Reviewed: Apr. 23, 2012
I found these buns to be a little heavy. I will say I dumped it all into a bread maker and didn't follow the directions about boiling the milk though, so it may be better if you follow all the directions properly.
