Extreme Chocolate Cake

Made this for my best friend's birthday! It was devoured to rave reviews! Am making again as cupcakes! Ran out of cocoa so had to use a can of chocolate frosting I had on hand. Other than that strict to recipe!

Blueberry Coffee Cake III

This was really good! It is great as breakfast or a dessert. It was very easy to throw together last minute. I did up the milk as suggested by earlier reviews to 3/4 cups. I did not use pecans since my family does not like nuts. In addition I cooked in a pie plate. I think it took longer to cook due to the additional milk and the frozen berries which I tossed in flour prior to incorporating. This recipe seems like it would be a good base to incorporate alternate fruits in as well. It may need a tad bit more sweetness in the bread itself but the topping does add a nice touch.

Easy Mint Chocolate Chip Ice Cream

I fully admit I made changes to the recipe. I am giving it such high marks for its versatility. And ability to be adapted as a base for all future ice cream attempts. This was our first attempt at making ice cream. We used a Cuisinart maker. Since my daughters of 5 & 7 were basically making the ice cream I didn't want to have to go from stove to freezer. We had 1/2 & 1/2 & heavy cream so used those. In addition love mint chocolate chip and heeded other reviewers and used mint. Salt taste WAS NOT A PROBLEM! Crystallization was not a problem. In addition those mentioning problems with chocolate chips being too hard/frozen must not have used the minis but the morsels. No problem with the minis! We are looking forward to our next batch. We will probably make chocolate chip cookie dough or coffee Oreo! THANK YOU!

Honey Bun Cake I

I have now made this twice in three days. The first time I made it exactly according to the recipe in a bundt pan. I did not have any difficulties as did previous reviewers with it being too moist. I brought it to a function at work and my coworkers referred to it as the "evil cake"- evil for diets and waistlines that is! I did find it to be too sweet however. It tasted like the cake mix. The second time I made it I substituted vanilla yogurt for the sour cream and applesauce for the 1/2 the oil. I also reduced the brown sugar to 3/4 cup. My 3 year old said it tasted like monkey bread! Will be making it again for it's convenience and versatility. Think next time I may try with blueberries!

Chocolate Chip Banana Muffins

Really liked these for their versatility. I was bringing these to a gathering at work and wanted to make them a little healthier. So I tweaked a little. I used whole wheat flour, 1/2 cup sugar, 1/4 cup applesauce, 1/4 cup vegetable oil, vanilla yogurt (all I had) and 2 mashed bananas. I know I changed it and shouldn't rate it based on these changes, but I love that the base recipe is so forgiving that these changes were withstood. Not only did my colleagues enjoy, but students in a morning class liked these as well! I also left two at home for my 3 and 5 year old daughters, and they actually ate them! One even wrote me a thank you note! Will undoubtedly make again and again and again and again!!!

Bread Pudding II

The whole family loved it, even the grouchy grandpa. The only change that I would make next time is to mix the raisins in with the bread rather than just on top! Definitely will make again! It was really quick and delicious!

Mom's Zucchini Bread

OH MY!! Yum!!! Even my husband who doesn't like zucchini bread said he liked it! I skipped the nuts and added chocolate chips instead! Loved it! May add more zucchini next time just to see what that does.

Easy Pumpkin Muffins

Oh my! I bake all the time, trying new recipes as I go along. I am not one to just change ingredients though. I read about 100 reviews before I decided to make these muffins. I used a carrot cake mix and a can of Libby's Pumpkin Pie Mix. I doubled the recipe and used my stand mixer because many reviews said it was difficult to mix. I ended up with 48 mini muffins, and 10 regular muffins. Plenty! I added the crumble topping from the banana muffins. I brought these to work, and had to refill the serving platter within an hour. In addition, I got about 20 requests for the recipe. Many couldn't believe that there weren't any eggs in the recipe, and how moist they were. I was so skeptical, but have now become a member of allrecipes just so I could review them and keep them in the recipe box. Don't wait, make them!
