Chili Colorado

Reviewed: Apr. 18, 2010
I thought this was delicious! I did alter by making it with stew beef because that's what I had on hand, and we don't like the smokiness of bacon so left that out. Otherwise, this was delicious. I made it with a spanish rice from allrecipes, and served with toasted corn tortillas. Delicious!

Spanish Rice Original

Reviewed: Apr. 18, 2010
Really tasty! I did follow some viewers advice, and added a can of green chiles instead of the bell peppers, but that's just preference out here in El Paso. No bacon either. Otherwise, followed quite closely and it was yummy.

Grandma's Secret Pie Crust

Reviewed: Jul. 5, 2010
I made this yesterday for an apple pie contest and won 1st place. The judges commented on how light and flaky the crust was. I followed the directions, and also took the advice to chill the dough. It worked out perfectly and I will never try another dough recipe. Yum!

Sugar Cookies

Reviewed: Dec. 6, 2009
I think this is one of the best sugar cookie recipes I've ever tried. I doubled the recipe and followed it pretty closely. I followed what one reviewer suggested, which was rolling into logs and then rolling in colored sugar sprinkles. I wrapped them in saran wrap and left in the fridge until I could get to them. It was SO EASY to slice and bake, and they are so delicate! I baked them for 10 minutes, and they came out light, flaky, and they just melt in your mouth. No icing required - perfect without1 Thank you for such a great recipe.

Caramel Apple Pie I

Reviewed: Jul. 5, 2010
I won 1st place at the apple pie bake-off using this recipe, with just a few minor alterations. I followed the advice to increase the cornstarch. I also increased the cinnamon to 1tsp, and used cajeta, which is a mexican caramel and a little richer tasting. Otherwise, I followed the directions and it came out fantastic. Everyone raved and I beat out the other pies by over 100 points.

Chocolate Cappuccino Cheesecake

Reviewed: Nov. 23, 2010
This cheesecake is fabulous. I do have to say that when using a 9" pan, it takes a little more than the 45 minute baking time, probably closer to 55 minutes, but no matter, it is FANTASTIC EVERY time. I do add just a few tablespoons of flour for our high altitude, but otherwise, I follow this recipe to a tee. Delicious.
