Lemon-Marinated London Broil

I used this marinade on Flank Steak, not London broil. I marinated the meat for 24 hours and cooked it on the grill. It was absolutely wonderful. I am not a particular fan of London broil, so I chose the Flank Steak instead. We had a crowd over for a weekend and everyone loved the flavor of the Flank steak.

Pumpkin Casserole

This was really pretty good. It is more like crustless pumpkin pie. I used cinnamon, fresh nutmeg and some pumpkin pie spice and it turned out very tasty. Served with cool whip on top.

Famous Japanese Restaurant-Style Salad Dressing

This was a very tasty and easy recipe. I prepared everything in a food processor. I did use a few substitutions. I used canola oil instead of peanut oil and apple cider vinegar in place of rice wine vinegar. I also added a little extra ketchup to give it a slightly brighter color and extra tomato flavor (this is what we are used to from our local Hibachi Steak House). This recipe is a keeper.

Pumpkin Hummus

I did not care for this recipe mostly because of the cinnamon, nutmeg, and allspice. I enjoy more traditional flavors for hummus. Not sure if I will try this again.

Ham and Pineapple Kabobs

My daughter picked this recipe for a school project. We omitted the mustard and used two tablespoons of rasperry preserves in our mixture for basting while grilling over a low heat. We added cubed onion and green and red peppers to our kabobs. We served it with rice and glazed carrotts as our side dish. They were very tasty. Will make again.

Lana's Sweet and Sour Meatballs

I used this recipe for a company Christmas Party. I used a 6lb bag of Italian Style Meatballs and doubled all of the sauce ingredients but I didn't have green pepper. I used sweet red, orange and yellow bell peppers, extra ginger, extra soy sauce, and approximately one teaspoonful of onion powder and as the sauce was cooking, I added extra pineapple juice because the sauce got too thick. It had a beautiful, colorful appearance and traveled well in a crock pot. Everyone raved and asked for the recipe.

Cha Cha's White Chicken Chili

I have made this recipe twice. The first time I followed the recipe without the green chilli peppers and about half of the spices. It was very good. The second time, I used left over turkey meat from Thanksgiving and followed the recipe exactly as printed. This was entirely too spicy for us (even my husband, who likes it very spicy). So I added the following: 1 large onion, 1 stalk celery, and 1 carrot (all diced), an extra can of chicken broth and 1 can of veggie broth. This helped to lighten the heat. I will make this again because the general recipe is very good. With a little improvising this can be adjusted to your preferences.
