Beef Tenderloin Asturias

Ed Zieba's Famous Family Pork Chops

Oh wow! These pork chops came out fork tender and delicious. The onions gave them a nice sweet taste (and were delectable in their own right). No dry pork chops with this recipe! Thanks!!! I am so glad I fought the urge to pan sear them first - sticking to the recipe was the way to go. The only deviation in my version was to place some sprigs of fresh thyme in with the onions.

Honey Roasted Carrots

Simple and delicious. I've made this with the regular grocery store carrots and some little sweet baby carrots from our local farmers market and both attempts were delicious. I'm trying to move to a healthier style of cooking and get the family to associate healthy with delicious. Thanks for providing a recipe that was a great help with this! I will be making this one often. It's lovely as is, though one time I put some fresh thyme on it and that was great too.

Beef Wellington

I was nervous about trying this recipe because it is one of those things that I've always loved and wanted to make but it seemed intimidating. I am SO glad that I finally went ahead with it. I made it almost 100% to the specified recipe except for adding some red wine to the mushroom/onion mix. I used the pate, and I'm very glad I did. It added another (delicious) dimension to the dish. Thanks very much, Normala, for providing a wonderful and easy-to-follow recipe. I'm so glad I tried it. The family loved it. One hint on the leftovers if you do a whole tenderloin instead of individual wellingtons...since the middle of the roast will be very rare at this cooking time, serve the end pieces the first night. The next night, slice the Wellington into individual slices and lay them in a pan, cut side up. Put a tiny pat of butter on each fillet and bake at 375 for about 15 min. mmmmmmm

delicious! we had it warm with some vanilla ice cream and everyone loved it. I can't believe how simple it was! I made it on a movie marathon night, and I was gone so little time that I barely missed anything that was happening when I disappeared to make cake.

Stuffed Peppers with Creole Sauce

I wasn't a huge fan of this one but my husband and son couldn't get enough. I think the meat filling needed a bit more flavor but the tomato Creole sauce is absolutely delicious.

Sweet and Spicy Green Beans

Wow, these were simple and good. I made them twice and the second time, because I wanted a little less Asian flair, I added some Worcestershire sauce to it, which makes it the perfect addition to a Southern/Cajun themed meal also. Definitely a keeper.

Bourbon Pecan Chicken

This was truly amazing. The sauce is absolutely delicious. I doubled the amount of sauce and served it over both the chicken and the mashed potatoes and the family raved. I did cheat a bit on the chicken though (insert sheepish grin here). I couldn't find clarified butter and didn't have time to make it on a weeknight, so I dipped the breasts in an egg/milk/salt/pepper dip and then pressed them into the bread crumb/pecan mixture. Also, I followed a suggestion on the thread to move the chicken to an oven pan to finish cooking. Some of them were kind of thick and the coating was starting to get too dark to keep them in the pan. I plan to try again on a weekend when I can make the clarified butter first and experience this one in its original glory.

Cherry Bell Cookies

I made these for the first time this weekend, and we certainly have a keeper! Huge hit with the family. The flavor is amazing, and the cherries are so festive and cheerful. Confession, though....I lacked time to roll out, cut, and shape the cookies so I rolled them into small balls and flattened them by hand. So they weren't bells per se....more like maybe Christmas Tree ornaments... Either way, they were festive looking and absolutely delicious!

Aunt Teen's Creamy Chocolate Fudge

This is the best fudge I've ever had. It was a little more work than the "quick" fudges that are so popular right now, but it is so very worth it! The flavor is phenomenal. One caution is that I had some trouble cutting it into cubes right from the fridge; I had to let it sit at room temp about 20-30 min before I could cut it without it shattering.

Great taste, but they came out very crispy at this temperature, almost like storebought. I did my last batch for 9 minutes at 350 and they were nice and chewy.

Bavarian Mints

I found this recipe about 7 years ago and I have been making them every Christmas. My son says they are "mandatory". These really are amazing...better than any fudge ever. They are so creamy and smooth, and the mint is not overpowering at all. We all love them. When it comes time to leave them in the fridge and hand-beat every few minutes, leave the blade from your mixer in the bowl - it's so much easier to use than trying to do it with a wooden spoon! I highly recommend this recipe -- easy and fantastic.
