These were WONDERFUL and they are a much healthier alternative to buying frozen taquitos/burritos/southwestern egg rolls. :) I added more black beans and did NOT add corn (in my opinion, corn does NOT belong in mexican food...) or spinach (I just don't like spinach). Thank you, Jackie!

Antipasto Pasta Salad

This pasta salad was WONDERFUL! I didn't use any salami, I used grape tomatoes cut in 1/3rds (they were a little large for grape tomatoes...) and added some cucumber. I made the dressing the night before and put everything together the morning of. It worked out well.

Dry Ranch Style Seasoning for Dip or Dressing

I add 1/8 t of Dill and other than that followed the recipe exactly. It made a wonder veggie dip. MUCH better than the dry ranch you can buy in the store...

Old Fashioned Coconut Cream Pie

I get rave reviews every time I make this pie. The only variation that I use is a Oreo cookie crust - my husband won't let me make it any other way!

Lemon Cream Pasta with Chicken

This is VERY lemony. My husband and I both like lemon chicken dishes but he ate leftovers instead of eating this. The flavors would have blended pretty well if the lemon wasn't so overpowering.

This sauce is great! I always use chicken broth instead of wine and I use it with the Tomato Chicken Parmesan and it turns out wonderfully!!

Chinese Chicken Fried Rice II

Ultimate Twice Baked Potatoes

We love these but often to have the time to back the potaoes, wait for them to cool, etc. As esay shortcut is just to make mashed potatoes and then add everything into the potatoes and put them in a casserole dish to bake.

Bran Flax Muffins

Sweet and Sour Sauce II

This recipe is a great base. Instead of tomato paste, I use half tomate sauce and half ketchup. I also add 1/2 - 1 each of onion and green pepper. It goes great with sweet and sour chicken/pork/beef or egg rolls!

Irresistible Pecan Pie

I made mini pecan pies using a muffin pan for a potluck and everyone LOVED them. The mini pies baked for approx. 30 minutes instead of an hour. Thank you for the simple, wonderful recipe.

Toffee Chunk Cheesecake

This was a wonderful cheesecake. Very dense and rich. The chocolate/caramel layer at the bottom is a little too rich for most people. Follow some of the advice and split the mixture. Also made with a oreo crust and it was wonderful!

Coconut Cream Cake I

Excellent cake - very moist. The longer it sits, the more moisture that soaks into the cake, it can become overladen if you wait to long to devour. :)

Hot Apple Cider

Everyone who is has tried this thinks it's wonderful! I made some in a crockpot at work and the citris turned it bitter after a few hours so be sure to remove the peels if you're letting it simmer for a long time.
