Best-Ever Texas Caviar

A client of mine made this for my office one day and after telling me where she found the recipe, I came right out and added it to my recipe box. I made this for the first time yesterday for a picnic with my motorcycle club and everyone loved it. They were even eating it without the chips as a salad. Made exactly as written, with the exception of garlic. I doubled it. I like garlic. :)

Caramel Popcorn

I ended up making two batches of this recipe today. I altered the serving size just a bit so I could use my hot air corn popper. Two batches of popcorn made 12 cups so I increased the recipe size. I did cut back on the butter by about half....left the remaining ingredients the same. The second batch I made I threw in some pecans, almonds and peanuts for variety. I have to say its absolutely delicious. Other than cutting back on the butter, I wouldn't change a thing. Oh....i didn't warm my popcorn before coating with the caramel and it seemed pretty good. Also, 250 degrees seemed to work well also. I did alter the pans from top to bottom rack every 15 minutes as I stirred so that may have helped some. Recommend for sure!!

My Crab Cakes

Super delicious. I changed it up a bit. I used 8 oz. fresh crab meat and 8 oz. imitation lobster chunks. I used minced garlic rather than garlic powder, a good squirt of prepared mustard and rather than 1/2 tsp. cayenne pepper, I only used 1/4 tsp. i also omitted coating the patties with panko or bbread crumbs. They fried up just perfect. I used an ice cream scoop to make uniform patties and it yielded 8. These are terrific, I will definitely make them again.

Olive Oil Dip for Italian Bread

I have to say this is now one of my favorite recipes. This is so easy to make, most people probably have all the ingredients right in their pantry, and it whips up in minutes. It was definitely a crowd pleaser. I made the recipe exactly as it was written, then after dinner, added another 1/4 cup of oil and 2 TB of balsamic vinegar as there was a lot of the other ingredients remaining. The second time around batch was as great as the first. Delicious!

Amish White Bread

This is a really good bread. I made it the first time with the full amount of sugar and it was a bit sweet. Not bad, but a little sweeter than I like my bread. I also used regular all purpose flour and it came out just fine. I just made it again, scaled back on the sugar by half. I think I'll like it better but time will tell. This is a good all around bread, makes delicious sandwiches and of course excellent just slicing, buttering and eating with dinner.
