Blackened Salmon Fillets
I used olive oil rather than butter per some of the other reviews. I, also, went lighter on the cayenne, but my 10-year-old son still said it was spicy. I'll definitely make it again as it was the first time my children seemed to enjoy salmon.

Slow Cooker Adobo Chicken
I used 1/2 cup soy sauce & substituted 1/2 cup red wine for the vinegar because I didn't want it to be too tangy for my picky eaters. I sprinkled cumin & used leg quarters because that's what I had. My pickiest eater (my 9- year-old son,) gave it a resounding 5 stars. Everyone liked it, & it was super easy. Definitely will add this to my busy work week stash of recipes.

Mexican Rice II
I just use taco seasoning when I'm feeling lay. It's, also, good with a can of tomatoes substituted for the tomato sauce.
