Yummy Sweet Potato Casserole

Scrumptious Chocolate Cake

I just made this cake for a dinner party and it is delicious! The next time I make this cake, I will only make half of the frosting as this recipe makes a TON of frosting that is far to rich to use all of!

Cajun Spiced Pork Chops

I just made this tonight for dinner and loved it. I made the recipe exactly as it says and loved the amount of heat that it had. I served over chilled applesauce which was the perfect balance to the spicy rub...I will definitely make this dish again!

Caribbean Stir-Fried Shrimp

I made this for dinner tonight and both my boyfriend and I loved it! I gave it a mexican flare by leaving out the soy sauce and putting this delicious combo in tortillas with a little shredded cheese and lettuce! I will definitely be making this again, so tasty and very healthy!

Cornish Game Hens with Garlic and Rosemary

These are SO moist and delicious. I rubbed minced garlic, rosemary under the skin of the hen and then every time I basted the birds, I pushed the broth mixture under the skin. Before serving I removed all the skin to save calories and it was delicious. The only downside to this dish is the difficulty in cutting the hens after they are cooked (and very hot), which I found to be cumbersome and did not produce the prettiest presentation. Luckily the flavor made up for it! I made this with the Roasted Vegetable recipe from this site...a yummy dinner!

Roasted Vegetables

This is a great side dish! I used dried Thyme and Rosemary which added great flavor, however I will use fresh Rosemary next time I make it because the dried Rosemary texture doesn't work with the roasted veggies. I followed another reviewer's advice to separate out the zucchini and bell peppers, adding about 20 minutes before it was finished. I also marinated all the veggies for about an hour before roasting, made for excellent flavor!

Artichokes and Green Beans

I have made this several times because my boyfriend LOVES it (and so do I). It is a very simple recipe that really spices up boring green beans. I added prawns last time I made it and it was a great addition to make this side dish a bit more substantial.

Hearty Tuna Casserole

I used this recipe more as inspiration than a literal recipe. I used fat free cottage cheese instead of mayonnaise to save on calories and I used fat free sour cream (but ended up adding more than suggested). I also used twice as much zucchini than recommended and cooked the tomatoes with the zucchini layer (highly recommend). It came out very creamy and delicious, hearty enough to satisfy my meat-loving starving boyfriend too! I will definitely make this again!

All-Day Apple Butter

I made this for a "crock-off" and won 2nd place! It is delicious, but as other reviewers said, very sweet. I highly recommend a food processor to chop 5 pounds of apples, it took me forever! I cooked it for 11 hours overnight and then took the lid off and cooked for three more hours to get a thicker consistency. Excellent recipe!
