Bread Pudding II

Great recipe. Have allergies to dairy products and substituted soy milk for milk and used fleischmans margarine and was still awesome, prefer 3 eggs instead of 4 as other reviewers suggested. Prefer to eat it cold the next day but doesn't usually last until then.

Apricot Bars I

Very good even though I used non dairy marg. (I'm sure they'd be much better with butter but I'm allergic to dairy) and a can of solo brand apricot filling. Baking times didn't work for me though, baked 2nd time for > 30 min. and crust was still moist and too soft in middle although the bottom was golden brown. Could be that I had it out of oven too long between 1st & 2nd baking. Well worth another try, think next time I'll increase 1st baking time to 25 min. or until the crust appears to be almost done. Pork Butt Roast with Vegetables

Delicious! The only thing I'll do different next time is to fill the pan less than 2/3 full with water, used large dutch over and after filling it 2/3 full with water and covering it the juices would have spilled out of the pan if I hadn't removed some before adding the vegetables(remember the pan is covered and the steam creates more liquid). Wouldn't change any thing else, used water only , no broths. After removing the veggies and meat from the pan boiled juices down to about !/2 to concentrate them and made a delicious gravy. It was great the next day too and I froze the left over gravy to have with pork tenderloin or broiled pork chops since there's never enough juice from them to make gravy.Thanks Kmitschke.

Best Bread Machine Bread

This bread turned out great, my 1st success. Had a problem with proofing the yeast in the pan so i threw it away and started another one in my pyrex 2 cup glass measuring cup and mixed the sugar and water real well before adding the yeast and it proofed beautifully. Set the crust on light as others suggested and ended up with a perfect loaf of white bread. Going to try with wheat flour today. Thanks karen.

Flax and Sunflower Seed Bread

This is delicious and so nutritious too. Just had the last piece (the crust) from the 2nd loaf that I've made and it was still so crisp and good.I store it cut side down on a cutting board with no wrap to keep the crust real crisp. Used olive oil instead of butter, interchanged the flour measurements, (more whole wheat than white)and ground the flax seeds, other than that followed the directions exactly and love it. Oatmeal Whole Wheat Quick Bread

Followed recipe exactly, used soy milk, dough was very dry, was barely able to form it into a ball. Baked @ 450 for 20 min and outside ok but middle wasn't cooked. May try again in 2 mini loaf pans as previous reviewer suggested.

Cranberry Walnut Bread

Delicious..great texture, nice crust,this bread rose higher than any bread I've made in my machine. Had to substitute soy milk with 1 Tbsp. vinegar for the buttermilk and it still turned out great. Didn't need to add any extra flour. Thank you Kathi for sharing.

Passover Brownie Cake

Great cake like brownies! Don't celebrate passover but was looking for a non dairy brownie recipe and fortunately found this. Halved recipe so that I could use an 8x8 pan in my toaster oven that I keep in the garage in the summer (too hot to put the oven on here) and baked for the same amt. of time. They came out just moist enough and wonderfully rich, no need for frosting. Thanks Sharone.

Kielbasa with Peppers and Potatoes

Green Tomato Cake

Halved the recipe for an 8x8 pan and it was very good but too sweet and not spicey enough for my taste. Made it again today (8x8 pan again) with the following changes and it's delicious: Half of original recipe for the tomatoes, flour, baking soda, salt and eggs. 1 tsp. cinnamon, 1 tsp. nutmeg, 3/4 cup sugar, 1/2 cup nuts and substituted 1/4 cup applesauce for the butter and omitted the raisins. Baked for 42 minutes. Also did not salt or rinse chopped tomatoes, simply chopped in mini chopper till finely chopped, measured 2 cups (approxiately 4 medium tomatoes) and drained (pressing down occasionally) in colander while preparing rest of ingredients. Hope to find more green tomatoes at the farmers market tomorrow.

Quinoa and Black Beans

Delicious. To prevent the Quinoa from becoming mushy keep the ratio the same as the recipe states (2/1) but simmer for 15 min. only.
