Quiche Supreme

I made this for a ladies' brunch, and got LOTS of compliments. One comment: "I've had a lot of quiche over the years, but this is the best I've ever had!"

Cabbage Sloppy Joes

Excellent sloppy joes! My four year old even requested leftovers the next day, and never noticed the cabbage and veggies! I did make a few changes - only 2 tbsp brown sugar (could even do with less), apple cider vinegar instead of regular, A1 sauce instead of Worccestershire, about 1 1/2 tsp garlic powder, and 1 tbsp of Jack Daniel's Brown Sugar BBQ sauce. Just a little customization for our family's taste, but we loved it :)

Fruit and Nut Muffins

Excellent muffins, TONS of fruit! I didn't use nuts since I brought them to a group with a lot of little kids, but these muffins went fast!

Nana Dot's Irish Soda Bread

Best bread I've ever made (and the first I've ever bothered to rate, heh). Absolutely excellent, wonderfully buttery and soft. I used both raisins and currants in the amounts given, but no caraway seeds, and it was amazing. I will definitely be making this again!

Balsamic Tortellini

I didn't use any bacon, but I did add a chopped up red bell pepper. In the future, I'll probably omit that, since the sweetness of the pepper didn't contrast well with the balsamic vinegar. Overall though, it was good -- my two year old ate two helpings!

The Best Thai Coconut Soup

Awesome soup! Everyone I've made this for LOVES it and has at least two bowls -- even my husband, who's very much a steak and potatoes, "no weird food" kind of guy. I've made it with shrimp once and I've made it with bay scallops, cooked about 2 minutes in their juices in a saute pan, then drained and added to the soup toward the end. It was absolutely wonderful, and I'll be making this soup with scallops from now on I think.

This bread was amazing! I made it just as directed, and folded in about a tablespoon of dried minced garlic, and it was just excellent. I paired this with Spiced Coconut Lentil Soup, and my two year old, four year old, AND my husband all loved it. I will definitely be making this again.
