Nell's Cabbage Salad

Super fast and tasty recipe--nice change-up from typical cole slaw. This goes great with a variety of meals in all seasons, and seems to please even picky eaters. For a little extra color, I usually add some grated carrot and thawed frozen peas. Never hurts to get in a few extra veggies!

Jalapeno Popper Grilled Cheese Sandwich

Tastes just like a popper--maybe even better! I use spicy chilli tortilla chips and cheddar-jack cheese and a high quality wheat bread and they turn out perfectly!! Makes a great dip or cheese ball also. I use regular cream cheese instead of the soft when making a cheese ball & mix in the shredded cheddar-jack, roll in a ball & chill & right before serving, roll in crushed tortilla chips. It is great! I might try adding some bacon to the sandwich or spread next time, I am sure that would be good also, but these are delicious made exactly as the recipe states.

Greek Bifteki

Very good! I decreased the tyme to 1/2 tsp. and added 1 teaspoon oregano. It is also good to use a mixture of half ground beef and half ground lamb. The butcher can grind the lamb for you. Then the burgers taste a lot more like gyro meat. I too added more feta per burger just because we love it! Don't over handle the meat and only flip the burgers once to keep them moist and not tough or dry. These are great served with Greek tzatkiki sauce and fresh sliced tomato, and Greek style roasted potatoes make the perfect side dish. ( Recipes for both are on this site )

Slow Cooker Ham and Bean Stew

This is extra easy and very flavorful & filling! The perfect Super Bowl food--start this in the morning and by game time--it will be ready!! I only made a few changes. I used 16 oz of frozen black eyed peas because that is what I had and used one can of white kidney( cannellini) beans instead of garbanzo, again because that is what I had on hand. I didn't drain any of the canned beans.I also diced up 4 carrots and 3 ribs of celery and sauteed them with the onion and garlic--which I increased to 4 cloves. I also added 6 slices of browned and crumbled bacon with a few tsp. of the drippings to the stew plus 1 tsp. of chili powder and some fresh ground black peper. The ham & the bacon added enough salt. It simmered all day on low and was perfect for supper with the sweet cornbread recipe ( found on this site) and cole slaw. Even my VERY picky 10 year old daughter loved this stew. My parents happened to stop by,& since this makes plenty, they stayed and enjoyed it too!! My dad said this is the best bean soup he'd ever had so my mom took the recipe home! Hard to believe something so simple made with common ingredients could be this tasty! For a little extra kick--some of us added a few shakes of green jalapeno hot sauce. This is a winner--just like the Indy Colts!!

Banana Pound Cake With Caramel Glaze

Very good made as is.A very moist cake, but I would not call it a pound cake--still delicious! I skipped the caramel glaze and served it with sliced bananas, strawberries and hot fudge sauce--it was excellent!! Will try the glaze next time.This was a great ending to an early spring grilled BBQ meal.
