Baked Teriyaki Chicken

This recipe was wonderful! The only thing I did differently was that I marinated it for 24 hours in a zip-lock bag and added about 6 cloves of mashed garlic to the marinade. Would definitely make again! This was a great hit to the family.

Cream of Leek Soup

This soup was very good and flavorful. However, I doubled the recipe and used 8 large potatoes. It definitely could have used more half and half which I didn't have at the time. The consistency was a bit too thick, much like porridge. Had I had milk other than fat free I would have added to it.

Coconut Cream Meringue Pie

As I've made this recipe once before, I decreased the amount of coconut to 3/4 cup and the sugar for the meringue to 1 tablespoon per egg. The next time I make it I'll also decrease the amount of cornstarch (as I thought it was a bit too thick) and add toasted coconut to the custard filling. Excellent coconut pie recipe!!! Definitely a keeper.

Denise's Peanut Chicken

Followed the recipe to a "T" but eliminated the peanuts and instead added one heaping tablespoon of extra chunky peanut butter. I also added 1 T of hoisin sauce. Yum! Absolutely delicious!!

Cajun Pasta Fresca

Very, very good. I added more minced garlic for flavor and omitted additional salt to the tomatoes as both cheeses have enough salt in them already. Excellent dish that I would definitely make again.

A-Number-1 Banana Cake

Very good, very light and moist. One of the better banana cake recipes! Made it in a 9 x 13" pan and baked it for 40 minutes. Have also made it in a large bundt pan and baked it for 55 minutes. Will definitely keep this in my recipe box.

Chocolate Lovers' Favorite Cake

The cake was VERY rich but delicious. However, should I make it another time, I will omit the chocolate chips and substitute it with its equivalent in cocoa. I prefer a smoother texture rather than the crunch of chocolate chips (or use mini chocolate chips).

Streusel Topped Blueberry Muffins

An awesome recipe! Of all the blueberry muffin recipes I've had in the past, this one "takes the cake"! Absolutely delicious, light, and moist. The tip about "flouring" the blueberries is a must. Also, the lemon zest gave it a yummy flavor! Definitely in my recipe box.

Poppy Seed Bundt Cake II

Excellent! Moist and scrumptious. I added about 1 tsp. of sugar at the bottom of my bundt pan before added the mixture. When the cake was done, poked holes through it and drizzled it with juice of one lemon and 1/4 cup of powdered sugar. Topped with zest of 1 lemon. To die for!

Lemon Poppy Seed Bundt Cake
