i was looking for these eggs!! wow they were greeat. First, to lower the calories and fat, i used turkey bacon, and did not use the margarine or butter. i Fried the bacon on a bit of olive oil since it has its own oil itself, when it was cooked, not crispy, i put them in the muffin molds. I used a silicon nonstick mold, and did not stick at all even when i didn't put butter in it. As a side dish, i toasted a little whole wheat pita and filled it with mushrooms and tomatoes, sauteed with pepper, onion (chopped) and garlic powder. a bit of salt. It was wonderful and not more than 280 calories in this whole meal! it was great!
