Creamy Au Gratin Potatoes

We love comfort food, at my house. This definitely fit the bill! I do change it up, every time I make it. For example, sometimes, I crush up my favorite croutons and sprinkle them over the top then cook for the last 15 to 20 minutes (uncovered). Other times, I have added sliced up kielbasa, carrots, broccoli...really, any veggies I have on hand. So many variations. Delicious!

Baked Brie in Phyllo with Mango Chutney

it worked! and was good. the only things i would change would be to cut down the oil...at least by half (just enough to lightly coat the dough). then, i would trim the white outer coating (as well as the thick exterior) on the brie. makes it taste old if left on. never used phyllo before... it wasn't nearly as hard as i imagined! thanks! one more thing, my husband had the idea of spreading minced garlic on the brie (both sides) before folding the phyllo dough around it. i suppose you could spread anything you wanted on it, like fruit, etc...the flavor does soak in just enough.

In hopes that others will learn from my mistake...be careful not to overmix or the batter will end up not as spongy. the flavor is still good but the texture is not right. And might I suggest dipping them in a thin lemon glaze, as soon as they come out of the oven.

Italian Sausage Soup with Tortellini

loved this recipe. the only thing I did wrong was to use the bigger sized tortellini. there just wasn't enough to go around. next time I will use the smallest I can find and probably the italian sausage ones instead of the cheese filled ones. thanks for the yummy recipe.

Chicken Fried Steak

great! I use Krusteaz Bake & Fry Coating Mix instead of bread crumbs. I also use McCormick's Sausage Country Gravy...because I know I like it and it's quicker/easier. one additional step I do is to LIGHTLY salt the meat before I tenderize it. just seems to bring out the flavor a little more.

Spicy Beef Vegetable Stew

yum! I made it following the ingredients to a tee.....perfect. the only change was to cook and drain the meat THEN add the onion for a few minutes before following the rest of the directions. we like our onions with more crunch. will make this over and over...thanks!
