Creamy Au Gratin Potatoes
We love comfort food, at my house. This definitely fit the bill! I do change it up, every time I make it. For example, sometimes, I crush up my favorite croutons and sprinkle them over the top then cook for the last 15 to 20 minutes (uncovered). Other times, I have added sliced up kielbasa, carrots, broccoli...really, any veggies I have on hand. So many variations. Delicious!

Baked Brie in Phyllo with Mango Chutney
it worked! and was good. the only things i would change would be to cut down the oil...at least by half (just enough to lightly coat the dough). then, i would trim the white outer coating (as well as the thick exterior) on the brie. makes it taste old if left on. never used phyllo before... it wasn't nearly as hard as i imagined! thanks! one more thing, my husband had the idea of spreading minced garlic on the brie (both sides) before folding the phyllo dough around it. i suppose you could spread anything you wanted on it, like fruit, etc...the flavor does soak in just enough.

In hopes that others will learn from my mistake...be careful not to overmix or the batter will end up not as spongy. the flavor is still good but the texture is not right. And might I suggest dipping them in a thin lemon glaze, as soon as they come out of the oven.
