Rainbow Pasta Salad I

This recipe is a great basic pasta salad to customize to your personal preferences. A lot of the taste will have to do with what salad dressing you use. I used Wishbone House Italian and it was good. I didn't have pepperoni, so I used sweet Italian sausage (next time I will use pepperoni). I used green olives instead of black, and I used Italian blend shredded cheese. I also added some chopped up cherry tomatoes and some banana peppers. I made it the night before, put half the bottle of dressing on it, then tossed it with the rest of the dressing the next day.

Brownie Chocolate Chip Cheesecake

Really good! This was my first attempt at cheesecake, and it came out great. I used Duncan Hines brownie mix and generic condensed milk. Instead of mixing the chocolate chips in the batter, I just sprinkled them over the top before putting it in the oven.

Easy Lasagna I

My very first attempt at lasagna! It was okay - regular noodles were done just fine without cooking them ahead of time. It was actually better as leftovers because it held together better. I used a full second jar of sauce (I used Ragu with vegetables) and added some garlic powder.

Spiced Slow Cooker Applesauce

This was yummy! I never made homemade applesauce before, but it was great. I cut the apples and water in half (fed 4 people), eyeballed the brown sugar (prob. about 1/4 cup), added a splash of cinnamon, and used just under 1/2 tsp. pumpkin pie spice. Threw it all in my 1.5 qt. crock pot on low for about 4.5 hours, and everyone loved it! Thanks for the recipe.

Smushed Apples and Sweet Potatoes

So good! Tasted great and the apples smelled amazing. I doubled the recipe and it fit nicely into an 8x8 dish. The night before, I microwaved the sweet potatoes (8 minutes each), and the filling scooped right out. (Thanks so much for that tip; I will never boil a sweet potato again.) The next day, I prepared the apples. I didn't have allspice, so I used a little pumpkin pie spice and a little nutmeg in place of it. The apples softened right up in about 8-10 minutes. I reheated the sweet potatoes in the microwave for about 2 minutes before added the apple mixture and milk. Then I sprinkled a tiny bit of brown sugar on top. I put it in the oven for a little bit just to make sure it was heated through and to keep it warm until I was ready to serve it, but I love the fact that it can be made entirely on the stovetop. I will definitely make these again, though they may be a little too sweet for some people.

Easy Broccoli Quiche

This was really good. The broccoli was enough to fill two pie shells. I used only about half the onion and added a small can of mushrooms. I also used sharp cheddar instead of mozzarella. I pressed some into the bottom of the pie shell before baking, as others have suggested. Because there was so much broccoli, I prepared two batches of batter. I made one pie and 6 mega muffins without crust. I used 3/4 cup milk in each batch. The pie baked for about an hour at 400 degrees, and was not runny at all. The muffins baked for about 30 minutes at 400 in a silicon pan and came out great. I highly recommend making this as muffins for a great and easy breakfast or portable lunch. It's slightly bland, though, which is why I'm giving 4 stars instead of 5.

Pineapple Casserole

Surprisingly delicious! The pineapple/cheese combo works! The cheese/crackers just formed a crust though; I wish it was mixed in with the pineapple. Next time I will try to do that. I used crushed for the full amount of pineapple. I also cut back the sugar to just over 1/2 cup and used Ritz crackers instead of saltines. I prefer it served warm.

Mandarin Orange Cake I

The best cake I've ever made! I made the following changes based on the other reviews: 1) I used only 3 eggs, and 2) I drained the juice from the pineapple, and just mixed the frosting ingredients lightly with a spoon, not beat them. It was the perfect consistency that way. I liked this cake because it was nice and light (I used Betty Crocker Super Moist Yellow for the mix)...doesn't really have much orange flavor, though. Next time I might add orange extract or orange juice.

Incredible Potato Casserole

Loved it! I used frozen hash browns which saved lots of work. I also followed another reviewer's suggestion and and added a small can of mushrooms, which was great. I didn't have any cornflakes, so I just added another half cup of cheese as topping. I will definitely make it again!

Mixed Vegetable Casserole

This was good! I sized it down a little to feed 4 and used an 8 x 8 dish. I used about 3/4 of 2 bags of frozen vegetables, about 3/4 of the soup and 3/4 cup of mayo. I used a generic mayo which kind of turned me off, and if I make it again I will use better mayo or sour cream instead. I used about 1.5 cups of cheese in the casserole and spread another half cup of cheese on top, then put the cracker crumbs on top of the cheese layer. We like cheese. Overall it was a hit.

Broccoli Cheese Bake

This recipe doesn't need any modifications, in my opinion, except maybe an additional 1/2-1 cup of cheese (we like it really cheesy). I added a little garlic and a little Italian seasoning, and that was a mistake because it overwhelmed the flavor! I also used a mix of 4 types of cheeses, but should have stuck with one. Next time I will keep the recipe as is.

Pumpkin Casserole

SO GOOD! I used a little less than a cup of sugar, used regular flour (plus the baking powder, etc. as directed by other reviewers), only used about 1/2 tsp. of vanilla since I ran out, and I also added 2 pinches of nutmeg. This is so yummy - as a side, a dessert, or even for breakfast!

Quick Cheeseburger Pie

I loved this! The pickle was not too strong for me, but then again, I like pickle. I used store bought crust. I made the following changes: added 1 Tbsp. of worcestershire sauce, added bacon crumbles, used a little garlic powder instead of minced garlic, and used sharp cheddar instead of Swiss cheese. We had it with ketchup on top. It was delicious! It only fed 4 in my house, not the 8 servings as listed. We had it with sweet corn and potato chips on the side.

Zippy Baked Carrots Side Dish

I really liked this. I left off the bacon because I didn't think it needed it. Next time, I'll leave off the bread crumbs (not really my favorite), use the bacon, and maybe double up on the cheese. Overall, good though!

Creamy Au Gratin Potatoes

I never made these from scratch before, but wow, do they beat the boxed version! I chopped the onion (used 1/2 and that was plenty) and mixed it in with the potatoes. I used mozzarella instead of cheddar because that's what I happened to have on hand. There is no way 4 potatoes would fit in a one quart baking dish unless they're tiny; I had to use a 9x13 dish.

Favorite Old Fashioned Gingerbread

I really love this, but I did change the recipe based on other reviews and what I had on hand. I only had 1/4 cup butter, so I used that plus 1/2 cup applesauce. I didn't have molasses, so I used 1/2 cup brown sugar plus 1/2 cup honey. I doubled the cinnamon and ginger to 2 teaspoons each, didn't have cloves, and put in a generous splash of pumpkin pie spice. The batter was very runny, but the end result was delicious. I used a 9x5 loaf pan. Served it with honey nut cream cheese - yum!

Ultimate Twice Baked Potatoes

So good! I made them pretty much as directed except I added some of the bacon to the filling and used a little grated sweet onion mixed into it instead of green onions. I coated the skins with vegetable oil before baking them the second time. I didn't have any problems with the skins holding up or with the filling being too runny. Next time I will cream the filling more, but that was my own fault for leaving it too chunky.

California Orange Carrots

I don't think the orange really added anything to the flavor of the carrots. I threw in a splash of orange juice but they still didn't taste very good. They needed some sugar or something.
