Quinoa, Beet, and Arugula Salad

This was a nice change from the salads we usually make. And very healthy. I didn't have red wine vinegar, so used red wine. Also used 1/3 C of both the olive oil and wine after reading previous reviews. Result was outstanding! Very good and we will definitely make this again.

Mini Mushroom and Goat Cheese Tarts

I love mushrooms, and wanted to try this out for an appetizer. I used the mini phyllo shells instead of the puff pastry, and that made these so easy! Perfect bite size servings. I also added white wine while sauteeing the mushrooms, and used a mix of baby portabella and white mushrooms. This was a huge crowd pleaser! Have already had requests to make it again and share the recipe.

Light Wheat Rolls

Very easy recipe and the taste was great. I made them exactly as recipe suggests, except that I cloverleafed mine. Dough was a little sticky as I'd previously read, but other than flouring my hands to punch it down twice, did not add additional flour. Results were terrific. I'll definitely make these again and plan to add fresh herbs (dill or rosemary) with some garlic to add flavor and interest. But they are great as they are.

White Chocolate Raspberry Cheesecake

I've made cheesecakes for years and have to admit this one was a standout. I made a few modifications. I used a full bag of Ghiardelli white choc. chips and had 2 squares of white baking chocolate that I added as well. Super rich flavor. I did not have frozen rasberries, so I used Polaner seedless blackberry jam. Everyone RAVED over this. The blackberry and white chocolate flavors combined were absolutely decadent. I will definitely be making this one again. I've already had several requests for it.

Easy Turkey Curry

This was a great & easy recipe, but we definately modified. Used about 2 Tbsp of curry, one whole chopped onion, and fresh chopped portabella mushrooms (at least 1-1/3 cups) to complete everything. But the end product was great. It did need a little additional salt & pepper, but that is an individual taste kind of thing. We will make this again.
