Zucchini Puffs
These sounded good, but after reading reviews, I made some modifications. I did not have baking mix, so used 1-1/2 C flour with 1tsp baking powder. Added 1/4 C of grated Parmesan and 2 tsp of Tony Chachere's Cajun seasoning, in addition to the onion and garlic. They turned out flavorful, but not spicy. Next time I will add more Tony Chachere's and sprinkle Parmesan on top when they come out of the fryer. Also, it did take me longer than 3 minutes to cook them. More like 5-6 minutes at 375 degrees. But they're a tasty twist for using zucchini, so will make them again.

Chicken Wild Rice Soup I
Wonderful soup for a cold winter day! The flavor is amazing. I added more carrots, celery and mushrooms (double) and also doubled the curry as suggested. Skipped the almonds because I didn't have any. Also used Chardonnay instead of sherry. Great recipe! I'll definitely make it again soon.

Apple Cream Cheese Coffee Cake
Our family has an apple orchard, so I'm always searching out new recipes to try. And I always make it a rule to read the reviews of previous posters. This is a great recipe when incorporating some of the tweaks. I did add cinnamon to the cream cheese mixture (@1/2tsp) and a large heaping spoonful of sour cream to help make it more spreadable. I added 1tsp of cinnamon and 1/8tsp of salt to the batter. It turns out perfect. I do like making mine in a springform pan as someone earlier suggested. Pretty presentation.
