Was looking for a quick, healthy baked chicken breast recipe and this was exactly what I wanted! It was so easy and the chicken turned out incredibly moist. I lightly pounded the chicken breasts with a meat tenderizer and substituted with whole wheat breadcrumbs. As previous reviewers have mentioned, I'll probably try adjusting the recipe by increasing the amount of olive oil & garlic and salt & pepper the chicken before dipping them into the oil mixture next time - but that's just personal preference. My picky family loved this dish! (I'm going to try using the leftovers for a chicken parm tomorrow night.) It requires no flipping in the oven, minimal clean up and it's yummy - you can't ask for a better dish!
