Thai Cashew Chicken

My son accidentally doubled the brown sugar and I was using a new hot sauce (Paw-paws Snake Bite), so I only put in half and this was a HUGE hit! We'll be eating this A LOT!

Zesty Italian Crescent Casserole

I made a double batch in a 13"x9" pan (which was just right for 1 can of crescent rolls) and fixed it close to "as is" for the first go to see what we needed to tweek, but used Mario Batali Arrabiata pasta sauce because it sounded a little plain. It wasn't much more expensive than the other sauces available, and I think it gave just enough flavor to keep it from being bland. The dish turned out great and I was asked to make it again soon. I'm thinking about using 50/50 spaghetti and alfredo sauce next time, which is what we use for spaghetti at our house. I think I'll also add some Italian seasoning and spicy Volpi sausage (from St. Louis) since one of our local stores carries it now. I've also been dabbling with the thought of using ricotta instead of sour cream. One thing to note is that I would brush on the butter, then sprinkle on the parm, so you don't end up with soggy spots in the crust. 4 stars because it needs so many changes, but it was a big hit at our house and may become a regular!

Crunchy Honey Wheat Bread

I just made this last night, because my boss asked me for a honey wheat bread. I cut a little off because it wouldn't fit in the gallon ziplock bag and tried a piece with some nutella for breakfast. I only had white wheat flour, because my son won't eat regular wheat bread, and vanilla almond granola (almonds picked out), but it turned out pretty well. The texture was good, it stayed together well while cutting and eating it, and it tastes good. However, I didn't get a lot of granola crunch or that honey flavor that I was expecting. I'll make this again, but will double the granola and the honey and see if that's closer to what I was expecting. Even if it's not, I'll keep making this, because it held up so well and makes a great sandwich bread.

Much better rolled thin & eaten straight from the refrigerator. Easy enough my 17 year old son made them himself for his German class Christmas party. He took a double batch for 30 kids (everyone brought a dessert) & they were gone before class was over.

This got mixed reviews at our house. I didn't want to waste half the can of tomato paste, so I used it all, and I'm glad I did. I think it needed either even more nutmeg or I've used another recipe that also had cinnamon. My boyfriend also asked that I add red pepper flakes to the meet when cooking next time. I also used macaroni, but that was personal preference. I also didn't read the other reviews before cooking, so I wasn't sure about the additional cheese to sprinkle on top, so I just added some parm!

Banana Nut Bread II

I cooked this in a Zojirushi Home Bakery Supreme on the quick cycle, and I was a little worried because I saw on some of the reviews that it didn't cook all the way through. When it beeped finished, sure enough, it was still a little too damp in the middle. My machine has a 1-hour keep warm cycle, which I know not to use because it it too hot and continues to cook. Well, I left the bread in through this cycle and it came out completely cooked without being overdone. I'm going to have to work out how to change the banana ratio for next time, as we like a stronger banana flavor though, and instead of walnuts I dumped in about 3/4 cup of chocolate chips that I had leftover from something else. I'll definitely make this again, but I'm going to have to play with it to get it just right for us.

Danish Peppernut Christmas Cookies (Pebernodder)

I have to agree with mobygirl, they aren't exactly like the real thing. I also notice nobody has mentioned one of the traditional ways they are eaten: dipped or poured in a bowl of sweetened buttermilk (that's the closest way I can describe it). My boyfriend is from Denmark and I'm always looking for recipes to make!

Baked Penne and Smoked Sausage

I used 1 lb each of smoked & flavorful spinach asiago chicken sausage we'd gotten from Sam's & grilled. It was a little bland. I think if I make it again, I'll add some red pepper flakes and maybe some spicy sausage or something to pep it up. Also, everyone complained there were too many peas, so maybe cut that in half & add a second veggie?
