Coconut Macaroons III

This was my first time making macaroons. They turned out great. I read through reviews and incorporated a few of the suggestions. I split the flavoring between vanilla and almond and chilled them prior to baking. Chilling certainly helps with the mixture not being as sticky and makes it much easier to work with. I baked them on wax paper, just a reminder that you need to remove them from the wax paper right away after coming out of the oven, otherwise the paper sticks to the bottom. I had something come up when a batch came out which required me setting them aside a moment and coming back, the few minutes was all it took. I am going to make again and drizzle with chocolate on the next batch. I am also going to try a few others, this recipe calls for flour, and I try to cook gluten free, will try making it with GF flour or a different recipe next time.

Ellen's Chicken Cacciatore

I have not ever made Cacciatore before. This was a great first recipe. It turned out wonderful, the whole family liked it. I used fresh squeezed OJ and the white wine that we had at the house, it was not a dry wine, and I could see how the dish would change based on the wine used, but it was great. I will be using this recipe again. Thank you for sharing.

Apple Yam Casserole

A new Holiday Favorite! The whole family loved them. I did make some modifications to the recipe, made it gluten free and I cooked in a slow cooker, not backed. I used and even mix of fresh yams and sweet potatoes (did not cook first). I read multiple reviews and some people suggesting increasing the brown sugar mix, I do not suggest this, it was plenty sweet for us. I used fresh cranberries instead of raisins. Once the water and brown sugar were mixed, I added 3/4 - 1 cup of cranberries to the mix so that they had time to simmer with the mixture. Instead of adding flour, I added cornstarch (use 1/2 the amount suggested for flour). One of the good suggestions from another review was to add the apples later, the potatoes take longer to cook. I left the potatoes and mixture in the cooker for about 2-1/2 hours on high, mixing/folding about ever 45 minutes to make sure all was cooking evenly. then added the apples and lemon. (which by the way, I did not peal the apples. Our apples were small right now, so I added more than suggested). Using the slow cooker was nice because it did not take up additional, very precious, oven space. I hope you and your family enjoy this as much as mine have.

Scallops Mascarpone

A new household favorite. Looking forward to making it again. The recipe is so versatile that you could add other veggies or meats (but I do LOVE the scallops and asparagus). I cook gluten free, so made it with gf angle hair pasta.

Peanut Butter Balls V

This recipe is now a holiday standard in my house. The pecans and graham crackers are a must in my book. I freeze the balls to chill them and take them out in shifts and then back into the freezer with the chocolate coating. Growing up my grandmother had made peanut butter balls, but there was no recipe, and unfortunately it was not passed on to anyone, this recipe is an excellent replacement and is now our standard.

Blackened Salmon Fillets

love the recipe. I make a large batch and put it in a shaker and it is now a staple in the kitchen and used with many different meats and dishes. So happy I found this.
