Brownie Batter + Cupcake = The SECOND BEST Cupcake. Ever

I used strawberry on top with brownie on bottom and vanilla frosting on top for a Valentine's themed cupcake. They were really good although my husband is requesting red velvet on top next time. I am leaning towards some sort of peanut butter flavor on top next time. These were great. I did about half of them in mini-muffin tins and cooked for about 15-16 min. I think I like them even better than the big ones!

Broccoli and Tortellini Salad

Really good and tasty. I too blanched the broccoli by throwing it in with the pasta for the last minute of cooking. I probably only used half an onion too because I didn't want it to overpower the dish. I added a little black pepper for my taste and used craisins instead of raisins.

Dill Pickle Appetizers

I really liked them but they were not a party hit. I have made these wrapped with bread like this or wrapped with ham or turkey slices if you are going low carb.

Lit'l Smokies® With Bacon

Used turkey smokies and turkey bacon and they worked out great. I was hesitant about the brown sugar so I made a test batch and the ones with the brown sugar were better and really did not taste sweet. Also, I used regular aluminum foil to line one pan and the "non-stick/release" foil on the other and the non stick foil seemed to make the brown sugar burn and really provided no additional benefit, stick with regular foil.

Won Ton Wrapper Appetizers

These were really good! Like the other reviewers, I used the phyllo cups and they were so crispy and pretty. I used regular sausage and pepper jack cheese. I used some powdered ranch to flavor the meat initially but ended up adding some ranch dressing and was glad I did. Definitely brown the sausage and drain it ahead or they will be greasy.

Snack Crackers

These were fantastic. I make different flavored crackers like this a lot and here is a tip.....mix the oil and seasonings in a little tupperware or jar ahead of time and shake it every so often for a few hours then pour over the crackers. That way, all of the oil is flavored as it seeps into the crackers.

Cheddar Baked Chicken

Great idea, very tasty. Once I got started I realized I did not have all the ingredients so I used crushed up cheese-garlic croutons in place of the Italian bread crumbs and rice cereal. I will try it as written next time for sure but I think the croutons were a good substitute in a pinch. I do recommend putting some cheese on in the breading so it crisps up but I put a little on near the end to keep the cheesy taste. Great addition to the recipe box!

Tex-Mex Macaroni and Cheese

Tasty, nice variation on mac and chese. I used Kraft Homestyle Mac and chese because that was all I had. My husband really liked it and I thought it was good too but I will probably add a few seasonings to my taste next time.

Slow Cooker Pork

I used about 1/3 cup vinegar as the only liquid and it was plenty moist at the end. I wanted a little more flavor so after shredding, I added some garlic, salt, pepper, and chipotle powder. It was fantastic on warm corn tortillas or a crusty roll. Will make it again for sure.

Barbie's Tuna Salad

Very tasty! It was quick and easy and I had everything right on hand. I was just making it for myself and had one of those 3 oz. foil envelopes of tuna so I kinda halved everything. I only used about 2 T. of Mayo and 1 T of pickle relish but everything else I just cut in half and it was great plain or with some Wheat Thins. I will definitely make this again.

I took these to a cookie exchange and they got rave reviews. They were really good. The cookies were a slightly puffy. I did not have cream of tartar and used 3 tsp. vinegar in the first batch and 2 tsp. vinegar in the second batch and I think the second batch turned out a little better. I also baked them 9 minutes because the 8 minutes was a little too underdone for my taste. I will make these again for sure!
