Lemon-Raspberry Muffins

5/5 for ease and directions 4/5 taste 5/5 texture...super easy directions and had my 3 year old help me with these. doubled the recipe got 3 batches (36 total large muffins). i followed the recipe to a T, doubling all ingredients. i added the zest of one lemon but stuck to the recipe using lemon extract. the lemon taste just wasnt there for me. couldnt even smell it when they were hot out of the oven let alone taste it. i like ALOT of lemon flavor but this was definitely lacking for me. will add maybe the juice of a lemon and/ore add more extract next time. maybe the buttermilk overpowered the lemon flavor? not sure. will be trying again though because overall they were 5/5 just lack of lemon flavor for me personally. cooking time was spot on @ 20-22 min. (used liners)

The Best Lemon Bars

followed recipe exactly. super simple. wasnt sure how thick to make the crust so just pressed it to fit the baking dish and ended up being about 1/4" thick maybe less (9x13 glass pyrex baking dish and crust came about 3/4 up the side of it) was perfect with the amount of filling. not sure why so may people felt the need to change this recipe. author was correct when she said 'Hint: No Substitutions!' but i guess tastes vary. i thought it had the perfect crust, perfect amount of filling and consistency and the right amount of lemon taste. will never make the boxed version again!!!!!

Ham and Beans

Followed recipe except used 1/4 cup brown sugar instead of 1/2 cup like reviews suggested and added 1/2 cup diced carrots I had on hand. First time making ham & bean soup and only ever had the canned version so I was semi nervous about the taste comparison. My beans weren't tender after soaking overnight and I've never used dry beans so I did simmer them for an hour In water before adding everything (I assume I didn't soak them In enough water possibly). Simmered everything for 1 1/2 hours till tender. Turned out amazing! Don't think I'll ever eat canned ham & bean soup again. 5 stars for taste and easy to follow directions!

Pistachio Cream Cheese Fingers

tasty & easy recipe w/ a few tweaks (def read the reviews of others) ------ probably best to use with a cookie press b/c like everyone else said the dough is sticky and awkward to roll into shapes. i did logs and balls and wasnt completely sure if they would keep their shape or not (only got 16 cookies total, guessing i made them too large though. balls flattened out to dome-like cookies and logs into fingers). didnt have any extra nuts on hand to add but will try next time to boost the flavor as it was subtle with just the jell-o pudding. similar to a sugar cookie-like texture but very moist. color was mint green after mixing but not after baking (will add green food coloring next time if doing for the holidays). my advice to anyone without a cookie press is to follow directions, let chill and use teaspoon amounts of the dough and roll into balls quickly. for chocolate use a zippie baggie to drizzle over cooled cookies. overall yummy cookies!

Eggs Benedict

first time making and tasting eggs benedict. i read alot of reviews before hand b/c i didnt want to mess anything up. i was only making it for 2-3 ppl but wanted to follow the directions to a T even though i knew there would be some wasted leftovers (after making it successfully i figured i would change servings to 2 the next time) SUPER easy. read and re-read directions and reviews quite a bit. used alot less lemon like suggested in reviews (calls for 3.5 tb and i used 1tb). besides that i did everything else exactly as called for. cant say it if 'tasted' like it should have since ive never had this before but it was wonderful and tasty and will def be making again but just in a smaller batch. prob wont try another recipe since this seems like a winner for me and easy enough! timing everything out and keeping it hot is your best option to get it right for sure so keep that in mind. 4 hands could be useful for this one :D
