Disney's Ratatouille

Um, wow. It's amazing how good this is for such a simple recipe. It is very forgiving ....like others, I added tomato but didn't have yellow squash, etc.. The tomato paste and parchment paper is key. The adults had it over couscous; the kids had it over toast. OMG ... a new favorite.

Mom's Zucchini Bread

This was right on -- at first I raised an eyebrow with some of the ingredient amounts but they were perfect. Then I was worried about the dry consistency of the mixture but once I added the zucchini, it moistened right up. I would not change a thing with this recipe. Definitely a favorite. THANK YOU!

Minestrone Soup I

I have been making this recipe for years and years - and years. I use green beans or zucchini instead of the cabbage and swap out veggie broth for the chicken broth to keep it vegetarian. It is our GO TO meal when we need something homey and comfy. Today is my son's first day home from camp and this is the meal he asked for. Served w/ parm on top and crusty bread and ... YUM. This thank you is years in coming!

Tasty Lentil Tacos

I have been making this for so many years and it is such a favorite that my daughter asked for it to be her birthday meal! I make it with veggie broth to keep it vegetarian. A great staple for a taco bar with healthy, yummy ingredients. Such a keeper.

Lemon Rosemary Salmon

Spinach and Potato Frittata

5 STARS for this great, versatile recipe. Upped all the amounts by a smidge to make two "pies" which I then baked like a quiche, for 40 minutes @ 350 degrees. I topped each plate with fresh, farmer's market tomatoes and basil mixed with balsamic vinegar, salt and pepper. What a huge hit - just what I was in the mood for. Thank you, Cheryl!
