Luscious Lemon Cake

Reviewed: Feb. 15, 2001
This cake was average. I didn't care for it's texture...it was too crumbly and spongy (in my opinion much like a genoise). I was looking for a more moist, firm, dense cake...

Mardi Gras King Cake

Reviewed: Mar. 5, 2003
I made 2 of these...one for my daughter to take to school and one for home. As far as the dough goes...it was wonderful to work with. It baked well too. I thought that the finished product was a bit on the dry side though (perhaps spreading softened butter on the dough before sprinkling the sugar/nut mixture. Also, I thought it was a bit "yeasty" in flavor and smell...perhaps it was the type of dry yeast I used though?? I would definitely make it again with just a few "tweaks" to take care of the areas dryness and over yeasty flavor. Overall a good recipe though!

Greek Lasagna

Reviewed: Mar. 5, 2003
The recipe sounds tasty , no doubt, however, I think it was a bit on the bland side. When I made it it was very dry and I had to add an additional batch of the cream sauce. Perhaps actually layering, as with traditional lasagne, would be better as it would keep the cheeses from melting and "disappearing" with the rest of the ingredients....I don't know, I just think that all of the flavors were overpowered by the pasta...I may try again but add some diced red and green peppers as well and then try the traditional layering rather than casserole method.

Greek Lemon Cake

Reviewed: Apr. 1, 2003
Totally Delightful! I specialize in doing specialty cakes from Birthdays to Weddings and I must say that I am extremely pleased with this recipe. It is so moist and light and down right delicious. I drizzled some thin icing/glaze over the top as well as a slight dusting of powdered sugar since the cake on its own was not as sweet as I usually like, but other than that it's perfect! Just a tip...Don't Throw Away Your Yolks!! I am so used to separating my eggs and discarding the yolks for making white cake and I wasn't paying attention when realized I had, by habit, thrown away the yolks instead of using them for the first part of the batter...Ughhh!

Award Winning Soft Chocolate Chip Cookies

Reviewed: Apr. 1, 2003
I have a good chocolate chip cookie recipe of my own that seems to be a hit with everyone, so I felt compelled to challange it by making these cookies...I was totally impressed. They tasted as good as mine, but I liked the fact that they stayed soft (unlike mine). They even tasted fresh after several days! I will try this one out for my chocolate chip "groupies" to see what they think!

Aussie Chicken

Reviewed: Apr. 1, 2003
Totally "Delish" My husband daughter and son liked it very much. I'm not a bacon/cheese eater, so I only tasted a bit of the chicken (minus all of the embellishments) just to try it out. I thought it was quite tasty and plan to make it when we get company! Great Recipe!!

Beer Bread I

Reviewed: Aug. 14, 2003
I found this recipe to be excellent as well as being exceptionally easy to prepare! I, like a few other people who have rated this recipe, find that it tastes exactly like the "tastefully simple" beer bread mix and is just about as easy to prepare (can't let my neighbor know though as she is a tastefully simple rep.) Also, I have made the whole wheat beer bread which is also on this site and I didn't like that one at all...it got too firm and stale-like before the day was through.

Whole Wheat Beer Bread

Reviewed: Aug. 14, 2003
Crazily enough, this recipe is rated higher than the plain "Beer Bread" recipe which is also on this site, but I found it to be much less pleasing. I found that the whole wheat recipe was OK right out of the oven, but as it cooled it became more and more tough (could be because I used freshly ground whole wheat flour rather than regular bagged whole wheat flour)...I don't know, I was just looking for a great tasting beer bread so I saved both recipes and tried them both and found the regular "beer bread" to be much tastier and much easier to prepare than this whole wheat version.

Banana Banana Bread

Reviewed: Sep. 5, 2003
It was pretty good. I am an experienced cake baker/decorator and I think this was pretty flavorful, but a bit too much like a "quick bread" as far as the density goes. If that's the texture you're looking for, the cake is fab. I was loking for a more cake-like texture in this case, but will keep this recipe on hand for the times I'm wanting a heavier cake.

Candy Ice Cream

Reviewed: Sep. 5, 2003
I loved this idea! I did it with the neighborhood kids and they thought it was great too. It took longer than suggested to actually freeze up enough to scoop, but the kids didn't seem to mind. The icecream was really good too. A definite keeper for me as well as the other Mothers in the neighborhood!

Key Lime Pie VIII

Reviewed: Aug. 13, 2004
This pie was really good, especially for how easy it was to make AND for the fact that one could make it nearly Fat Free. My husband really liked it, as he is a fan of Key Lime Pie but always feels so heavy and gross after he consumes even a little slice of the more traditional version with all of the egg yolks...so in his opinion I suppose the recipe would receive 5 stars. I, on the other hand, thought it was good, but I think I would cut down on the lime rind because it was just too "limey"...not too tart, but too much rind flavor...Still a fablous recipe overall though! Wonder how this recipe would translate to a Lemon Meringue Pie??

Georgia Peach Pie

Reviewed: Aug. 29, 2004
I really loved this recipe and have never made one like it before. It just sounded light and refreshing, so I decided to make it today. I did, however, substitute uncooked oatmeal/oats for the nuts because I don't care much for the flavor or the fat in nuts...It was wonderful! I think I may try wheat germ the next time, as I think the crunchy texture would go nicely with this "crust". Overall, a great dessert, and quite easy to make!

Best Big, Fat, Chewy Chocolate Chip Cookie

Reviewed: Feb. 11, 2005
In addition to my post below I had delved pretty deeply into the reviews and found a lot of people having problems with flat cookies and having to chill the dough before baking...Perhaps the recipe should suggest melting the butter and then let it come to ROOM TEMPERATURE *BEFORE* starting the recipe...that's usually a rule of thumb to follow, so perhaps this will help??

Cocktail Meatballs

Reviewed: Dec. 19, 2005
I made these this past weekend for a holiday party and they were a huge success...I rolled the meatballs the night before and refrigerated them and then put them straight into my slow cooker about 3 hours before the party the next day-(I never cooked them in the oven first like the recipe stated) and they were awesome and very tender...Super Recipe...I'll be making them again this weekend for another party!

This recipe was a bit of work, but very well worth it...My husvband LOVED it! The chicken was so moist and flavorful. It even held up to reheating a day later for "leftovers"! Great recipe!

Fortune Cookies I

Reviewed: Feb. 13, 2006
I absolutely love this recipe, and I have even posted another Fortune Cookie recipe on this site, as it was always my favorite, until now! This recipe is just like the Fortune Cookies you get in a Chinese restaurant. The thing I like most about this recipe in comparison to my other recipe, is that my other one calls for butter and yes, it does enhance the taste and yes, I will continue to use this recipe when I mold the cookies into other shapes (logs, bowls...) because the butter makes such a tasty cookie, BUT I have now, officially adopted THIS recipe when I want to put in the fortunes, because these don't put the grease spots on my paper fortune like the recipe with butter. And no matter how I tried, I could never get around those butter/grease marks. The key to this recipe is to make sure you make each circle VERY thin before baking to prevent a soft pancake-like center. Follow the rest of the directions closely and you will have successful fortune cookies for your special event!
