Addictive Sweet Potato Burritos
YUMMY! Quick and easy to make. I varied it a little and blended the sweet potato and bean mixture together in my stand mixer, as I couldn't find my potato masher anywhere. I sprayed a little cooking spray on the tortillas and baked at 425 for 8 minutes, flipped and cooked for 4 more and they turned out crisp and brown. The left overs heated up well the next day. I didn't have enough tortilla shells, so I froze the rest of it. I will update after I thaw it and try to use it again.

Honey Oatmeal Bread I
Yummy! I have really enjoyed this bread. I am new to making bread in my machine- so I not going to be able to give too much a technical review. My mother was wary of the small amount of yeast called for in this recipe, so we used a half of a packet of yeast, and proofed it with half of the water and a dollop of the honey. It worked well! The bread has a dense consistency, and is a good hearty breakfast food. Perfect for cheese toast!! You don't specifically notice the oatmeal or the wheat germ. This is a winner!!!!

Sausage Balls
I got all this stuff mixed, rolled and baked and out the door in about an hour. I found out at the last minute I was supposed to bring something to a holiday party- and these were a life saver. They were the hit of the party. I cooked them on parchment paper, so they slid right off. I used Jimmy Dean sausage Hot and Mild mixed together (it was all I had), and sharp cheddar. I formed the balls with the raw sausage- about 1 inch in diameter They were a little greasy-but what do we expect? These are sausage balls! That is like complaining that ice cream is cold!! I just slid them off onto a plate lined with paper towels while the others were cooking. I ended up making more that weekend for us to snack on around the house!!
