fabulous exactly as is!! (used 4 small yams instead of 2 large yams) can substitute vegetable broth for chicken broth. use blender, not cuisinart!!

Delicious Black Bean Burritos

doubled recipe made 6 tortillas. used whole wheat tortillas and added salt, pepper and chili powder to bean mixture. spoon salsa and shredded sharp cheddar cheese over top and bake uncovered 15 minutes at 350 degrees.

Ham and Cheese Quiche

perfect in terms of proportions of eggs, creamo and flour. do not add salt to ham and do not use canned mushrooms. i made it with leftover baked ham, garlic-butter sauteed leeks, onions, and scallions and sharp cheddar cheese. yumm!

fabulous - substituted 1 c applesauce plus 2 Tbl oil for 1 c oil, and used 1 c ww flour and 2c white flour. 2 loaf pans for 1 hour 20 minutes.

Spaghetti Squash I

Used as a basic recipe - only needed a tsp or two of oil (olive) and sauteed onion, red pepper, cherry tomatoes and a chicken thigh. Added chopped cucumber and feta cheese on top. Yum.

Strawberry Pie II

Hull and half 3/4 of the strawberries and pile up in the pie shell. Mash 1/4 strawberries and add 3/4 c sugar, 1/2 c water, 3 T cornstarch and boil 3 minutes - will be thick. Pour over strawberries. Refrigerate for an hour to set.
