Shirley's Maine Clam Chowder

Reviewed: Feb. 20, 2013
I cook the chop and cook the bacon, add the chopped onion, celery and cook until translucent then set aside. I use the same pot to cook the cubed potatoes; I use 3 or 4 cans of chopped clams, I poor the juice off the clams over the potatoes and cook until starting to soften. You can add a little water if need be to just submerge the potatoes in liquid. I also use 2% milk instead of half and half to keep the fat down. You can thicken with cornstarch and water if need be.

I added 4 C chicken broth,2 cans yellow Hominy, 1 can tomatoes, 1 can green chilies, fresh tomatoes, I didn't have chicken so I used Jimmy Deans Hot sausage & left out the taco seasoning! Topped with avacado, chedder cheese, cilantro, slices of corn tortillas and sour cream, yum, yum, yum!

Best Butternut Squash Soup Ever

Reviewed: Jan. 30, 2011
Wonderful warming soup! And simple to make, I always save the broth when I boil chicken, turkey, etc. I cool it and remove the fat from the top and freeze in baggies. I used the broth from boiled chicken in the recipe, also I found that fresh Thyme can be frozen in the store package and is easily removed from the stem, again wonderful recipe! Thanks for sharing.
