Dressing Patties

Reviewed: Dec. 1, 2004
Just had to try this recipe as I have an aunt who does not care for extremely moist stuffing. These were great! Had a nice crispy exterior and moist interior. Best of both worlds for those people who really like the top of the stuffing (with the crust) but not the bottom (with the mush). People really seemed to enjoy them, even the teenagers. I made my biscuits and corn bread the night before, let them cool and crumbled them into a large bowl. Covered loosely with a tea towel and set on the counter to dry overnight. Then mixed everything up in the morning. This was a really easy recipe. I did increase the seasonings a bit as we like food with a little more flavor in our family. I would recommend this to anyone.

My Chili

Reviewed: Dec. 1, 2004
This was a good basic chili recipe for a variety of tastes. I added an extra can of beans (1 drained, 1 not), 3 cans of Rotel tomatoes w/chiles (drained - used these in place of the stewed tomatoes), an extra 1/2 lb of ground beef, 1 large green pepper, an additional 8 oz of tomato sauce, 1 tsp of cumin powder, increased the chili powder to 2 1/2 T, and omitted the oregano. I cooked this in the crockpot for an hour on high then turned it down to low for about 5 hours. Served it with crushed Fritos chips, sour cream and shredded cheese. It was delicious! We had also had chicken & rice soup that night (family function) and this one was gone right away! Thanks for a great recipe!

Chocolate Cherry Cake III

Reviewed: Nov. 12, 2004
Nice, fast desert. Very easy. Made 2 cakes for work, 1 with the frosting and 1 without (for those who dislike frosting). Provided some Cool-Whip for those who took the cake with no frosting. It is good both ways, but I personally liked the frosting version better. You could probably use 1/2 the frosting and that would be plenty. Thanks for the recipe!

Cheddar Ranch Dip

Reviewed: Nov. 12, 2004
This was fast to make and my co-workers seemed to enjoy it. I think it could use a bit more flavor/spice - maybe some green onion? Honestly I would make it again just because it is so easy! Thanks so much!

Hoagie Dip

Reviewed: Nov. 9, 2004
This was good stuff! Made it for "Friday Treats" at work. Used a food processor to cut everything fairly fine. Used packaged shredded lettuce. Added 1 1/2 T balsamic vinegar. Served it with sliced french bread. It went over better than the dessert I made. Makes a LOT. Thanks!

Chocolate Chip Bars

Reviewed: Jun. 2, 2003
Was very disappointed with this recipe. Needed a quick dessert for a meal we were putting together for a co-worker recuperating from surgery. Needed something easy, which these were. But the grease! These are the greasiest bars I've ever made! I followed the recipe exactly, using butter flavored Crisco. I sampled one of the bars to see what it tasted like and you guessed it - grease. I'd make something else but it's 10:35 p.m. and the Scots in me won't allow me to throw them out. (Too cheap!) All I can say is I hope they don't make her feel even worse than she does. Thumbs down.

This was a nice and easy salad. Good side dish when having a barbecue.

Baby Shower Raspberry Dip

Reviewed: Apr. 15, 2003
Delicious and creamy dip. Everyone kept asking me if it had strawberry (couldn't find raspberry extract) in it. Of course the 32 ladies in my section at work almost died when I told them it had not only cream cheese but sour cream in it. Oh well...you only live once! Thanks!

Pumpkin Fluff Dip

Reviewed: Apr. 15, 2003
Mmmm. mmmm. mmmm. This stuff was awesome. I gotta tell ya, I was worried that it would like orange or even worse, brownish moosh. It was actually a very pale orange color and nice and fluffy. It really set up well thanks to the pudding. My only "complaint" is that it made a LOT (and that's an understatement). Unless you have a very, very large crowd I'd suggest cutting this in half. Otherwise it's awesome!

Garlic Pita Bread Bites

Reviewed: Feb. 12, 2003
These were awesome. I used a pastry brush to put the butter mixture on the cut up pitas. I made these to go with a tzatziki recipe on this site and I have to say these saved the tzatziki (pretty bland) from being a disaster. The little kids loved these by themselves. Thanks!

Jean's Marinated Mushrooms

Reviewed: Nov. 30, 2002
Were o.k. Made for my Dad's 50th birthday. Had a lot of mushroom lovers there and I still took some home. Not a good sign. Thanks anyway.

Apple Crisp II

Reviewed: Nov. 30, 2002
Delicious. I read the other reviewers suggestions and double the topping (putting cinnamon in the topping also), decreased the white sugar by 1/2 and used 1/2 Jonathan & 1/2 Granny Smith apples. Took about 4 Grannys & 5 Jonathans. The pan was FULL. (Probably because of doubled topping.) Most people at Thanksgiving chose this topped with ice cream.

Yum-Yum Corn

Reviewed: Nov. 30, 2002
Unfortunately I did not really care for this recipe. Everyone at Thanksgiving said "it was o.k." I did use the full block of cream cheese and maybe should have used 1/2 as other reviewers suggested, although I did add an extra 16 oz bag of corn, which I had thought would cut it down. I think I would make this again but cut the cream cheese by a 1/3 and add some shredded cheddar cheese instead. Thanks anyway...it was worth a try and was something different for a change!

Broccoli Rice Casserole

Reviewed: Nov. 30, 2002
Good broccoli rice recipe. I used the Tex-Mex velveeta as suggested by others and cooked my rice with chicken bouillon (but still added the salt, which was a mistake as made it just a little too salty). I used 3 (10 oz) boxes of chopped broccoli which gave it just the right consistency. (Otherwise would have been too "soupy".) I only used about 5 stalks of celery, which was plenty in my opinion. The only thing I would do different next time would be to add some chopped up ham or maybe some extra shredded cheddar cheese on top. Thanks so much!

Apple Enchilada Dessert

Reviewed: Oct. 15, 2002
Very lovely and easy recipe. I too halved the amounts of the sugars. I chopped up my apple pie filling and added extra cinnamon to it before filling the tortillas. The sauce is a little thin, but that's all right. Very nice recipe that went over well with people of all age groups and tastes.

Slow Cooker Mashed Potatoes

Reviewed: Oct. 15, 2002
These were very tasty and a nice way to do the potatoes "ahead" and keep them warm for company. I think I added just a little too much of the potato water...they were just a tad on the runny side, but firmed up once on the plate (out of the pot). I will be making these for the holidays. Thanks!

Alyson's Broccoli Salad

Reviewed: Aug. 7, 2002
I have been making this for years, using slightly different amounts of the ingredients. (4 cups broccoli, 1 cup raisins, 1 cup sunflower seeds, 1/2 cup sweet red onion & 8 slices bacon for the salad. For the dressing: 1 cup mayo, 1/2 cup sugar, 1 T. vinegar) My suggestion to those who say the broccoli is too "crunchy": I always mix up all of the salad ingredients the night before I serve this. The bacon "softens" the broccoli. I mix up the dressing ingredients separately, in another bowl, and add a couple of hours before serving to let the flavors blend. And I suggest using "real bacon", but I know we're all busy people. Always delicious...have had so many requests for this salad people pay me to make it for graduations, weddings, etc.

Sausage Gravy I

Reviewed: Aug. 3, 2002
Know I'll sound like a broken record...but this really is THE best! The only gravy I'll ever use from now on for biscuits n' gravy! Made this for my father's birthday brunch. After I prepared it put it in a crockpot to keep it warm and everyone just ladled it out onto hot biscuits. The bacon grease is the secret to the flavor of this gravy. My only change was to add quite a bit of salt and pepper. We love it so much we eat it for a quick supper all the time. We cook frozen biscuits in the oven and cook a bag of shredded hashbrowns while we're making the gravy. (We put the hashbrowns on top of the biscuits then ladle the gravy over all.) Mmmmm, mmmm!

Chili I

Reviewed: Mar. 12, 2002
Found this recipe a little time consuming. Flavor was pretty good, but not great. I read the previous reviews, and decreased the brown sugar to 1/4 cup, used 2 cans of beans, increased the meats by 1/2 lb each, used 2 cans of diced tomatoes w/green chilies, only 1 can of tomato paste & decreased the peppers to 2. My family said they preferred my mom's chili recipe, and we're known for trying new recipes (as many as 5 a week) so it can't be because we're close-minded. Thanks for the recipe, though. It was fun to try something new.

Praline Sweet Potatoes

Reviewed: Feb. 17, 2002
My recommendation - and I know the purists out there will shudder - use canned sweet potatoes. Will make it a lot faster to make this recipe. Also, it says this will make 6 servings...I feel it makes about 8-10 as a side dish. Especially if you don't have a lot of people who like sweet potatoes in your family. The flavor was great, especially reheated the next day. Great recipe!
