Scalloped Corn III

Very good and easy. Doubled the recipe, baked in a 9 x 13 pan. Sprinkled some shredded cheddar on top for the last five minutes or so. Nice and moist without being the "gloppy" scalloped corn I remember from when I was a kid. I really liked the green onion as well. This will be put in my favorites.

The Best Banana Bread

Tried this b/c of all the great reviews. Made it for my niece and nephew (spending the night) who loves banana bread. Were we disappointed! My husband and my nephew wouldn't even try it. My niece braved it and shared a piece with me, then said "let's just save it for breakfast, o.k.?" This from a 6 yr old. This was moist but did not "appear/feel" cooked through. Very little flavor even though I used real butter, 1/2 white 1/2 brown sugar, some cinnamon, vanilla, nutmeg and salt. I did not like the texture. Felt I wasted my ingredients, time, and let down my niece and nephew who waited so patiently then didn't like it. Would not make again.

Skillet Chili

I wasn't a huge fan of this. Missing something. I've never used tomato paste in chili before, usually petite diced tomatoes. Maybe I should've stuck with that. Also, I did use the garlic powder, per the recipe, and I normally use actual garilic. I probably would have given it a 3, but speed and ease of preparation made it worth 4. Also the fact that it didn't have any "unusual" ingredients, just items I already had on hand. Makes this a weeknight chili rather than a weekend chili and that's just what you need sometimes. Having said all this, I would try it again with a few changes. Thanks!

Classy Green Bean Casserole

Made it at the last minute. Made as directed, other than some cheddar cheese I added in. Everyone loved it, said much better than the "regular" version. Now that I've seen the reviews I'll try it again with 1/2 cup sour cream instead.

Quick and Easy Chicken

I liked everything about this, except that I found the sauce just a little too tart and thin. I should have read the reviews first. (I found the recipe, thought it looked good, printed it out and got to cooking!) I would've doubled the sauce (maybe not the lemon juice or pepper??) and would've let the sauce boil a bit longer. I will take another reviewer's suggestion and add some salt next time. Otherwise I really enjoyed this and will make again, due to the speed of prep and moistness of the chicken.

Mexican-Style Goulash

Came home, had the stereotypical "blah" pound of ground beef in the fridge. Wanted something different for a change. Took a minute to search the site and found this! My only changes were: added minced garlic in w/the onions and ground beef while cooking, and also added 1/2 tsp ground cumin, 1/3 extra cup macaroni, 1/3 extra cup water. Next time I will use "petite diced" tomatoes instead due to my finicky husband. (His only complaint.)This was so good I'll never make "regular" goulash again!! Thanks for rescuing me from another boring ground beef dinner!

Deli-Style Pasta Salad

This was o.k. Makes a lot, but doesn't keep that well...I think due to the cucumbers. I might make it again for a family reunion but would need to make a few changes. Thanks for the recipe.

Boilermaker Tailgate Chili

This is good chili! I did only use 1 jalapeno (finely minced), 1/8 cup of chili powder (instead of the 1/4 called for) and 1 tsp of hot sauce. Also 3 cans of beans instead of 4 (seemed like it would've been bean overload otherwise). I used fresh bacon as many of the other reviewers suggested. I used four slices, cooked & crumbled. I think next time I will double the bacon as it gave it a good flavor. We ate this at lunch for a family gathering. Had something else planned for dinner but they asked us to heat the leftover chili up as well. This is perfect with a small dollop of sour cream, some crushed fritos and sprinkled with cheddar cheese. My 78 yr old grandma who eats like a bird ate 3 bowls! Thanks for a delicious chili recipe!

Hamburger Potato Casserole

This was very easy and I liked that it called for things most people usually have on hand. I made it exactly as specified but next time I will add more spices and maybe some mushrooms as some of the other reviewers suggested. My husband loved it exactly like it was. I felt like the potatoes got too soft - but I cooked it the entire recommended cooking time and I covered my pan with foil -- so I probably should've cut the time down. Thanks for the recipe!

Dump Bars

These were very good and easy. Needed something to make for a bake sale at the last minute and found these on the site. Thought they sounded good so gave it a try and made 2 pans. They were the first thing to sell. Ended up forgetting a plate at home and my husband and I got to sample one also. I have another pan in the oven right now. Yum!

Italian Spaghetti Sauce with Meatballs

This was very good and very easy. I did use several of the other reviewer's suggestions such as additional spices and cheese in the meatballs, added some Merlot during last hour of cooking, and I used 1/2 crushed tomatoes and 1/2 diced. I had a large group to feed so I quadrupled this and added 1 lb of browned Italian sausage to the sauce to stretch it even further. The meatballs were good, the sauce was even better. Thanks so much for a good recipe that we all enjoyed!

Gramma Bertha's Banana Cake

This was a very easy,inexpensive, good and moist cake recipe that I will be making frequently. It has a mild flavor that the children at my family reunion especially enjoyed, and it was easy for them to eat because I did not frost the cake. I will add this to my favorites. Thanks!

Carrot Cake Bars

These are outstanding! I followed the recipe (ingredient-wise) exactly. I made these with the suggested cooking time the first time and they were way too moist, but very flavorful. I made them again 5 days later and increased the cooking time by 15 minutes and they were PERFECT. Man, these are good. Thanks!

Mom's Great Green Beans

Pretty good. Kind of had a "tang" to them. Probably the worcestershire sauce? Our new goal in life is to actually eat 5-7 veggies or fruits a day. These are fast to fix and a nice change. I agree they might be improved by using fresh or frozen beans. I will try that next time. But I would make them again with canned when in a hurry for a side. Thanks!

Focaccia Bread

I made 2 loaves of this for a party. Not sure what I did wrong, but neither one rose (one not at all) much. The flavor is really good, although I don't think it really needs all that cheese. If someone can tell me what I did wrong, and how to get the dough to rise I sure would appreciate it as I would like to make this again. I heated the water to 115 degrees, then dissolved the yeast in that. I mixed all the dry ingredients in a bowl, then added the olive oil, then the liquid yeast mixture. I kneaded for 5 - 8 minutes and let it "rise" for an hour in the bowl, then an hour in the pan, and still it didn't rise.
