Cuban Picadillo

I've made this twice now. My family doesn't like beef, so I substitute boneless skinless chicken breasts. I added cumin and cayenne, salt, pepper, and paprika. Finally, I drained the olive jar into the pot as it seemed a more flavorful option than water.

Unstuffed Cabbage Dinner

I have to qualify my five stars. I loved it. Two in my family hated it. One said it was ok. I used 98 pct lean ground chicken w 8 oz chopped mushrooms. I deglazed w red wine, used cooked white rice, tomato soup instead of v8, and chicken broth. Coking low fat and without beef, I find mushrooms and deglazing the pan w wine go a long way to add flavor. Final tip is I don't drink wine, but keep those little four packs handy for cooking.

White Bean Dip

I make an oil-free version that's very good. Use one can drained beans, one can undrained. Agree with other posters that more than 1-1/2 tsp lemon juice is probably plenty.

Quinoa Tuna Casserole

Solid, healthier alternative to egg noodles. I made these changes to speed things along. - cook 1 can chicken broth with 1/2 can quinoa 10 min in microwave, stir 2 x - add one can 98% fat free cream of mushroom soup and two cans drained tuna - stir, add to 9*9 casserole and bake at 375 for 45 min I would add fresh herbs and maybe peas next time to give it color. It looked unappetizing, but tasted good.

Pretzel Coated Fried Fish

I thought i had pretzels, but we were out, so i used smashed-up triscuits. It was pretty awesome! Also, I put some penzy's seasoning into the flour mix.

We really liked this pie. It was easy to make, which is required for my baking. We followed a couple of the suggestions. 1) Bake in stages (crust for 10 min (we used regular crust, not graham), filling for 10 min, meringue for 10 min). 2) We used 4 egg whites for meringue.

Six Can Chicken Tortilla Soup

Solid. I used fresh boneless skinless chicken and cooked that down in the broth, and then shredded, before adding the other ingredients. I also added a packet of taco seasoning. It was pretty bland before that. The kids complained that the Ro-tel tomatoes I added were too spicy.

Buffalo Chicken Burgers with Blue Cheese Dressing

My whole family enjoyed these. I substituted 93% lean turkey for the 83% lean chicken, used only 1 T of Red Hot in mix, and did a 50/50 split of light sour cream and light blue cheese dressing w/ the blue cheese. Then, i added extra hot sauce to mine.

Chickpea Falafel Burgers

Really good. We combined a couple of recipes. We didn't have mushrooms, but they'd probably be really good. Also, used 2x beans and no eggs. Pan fried one side, then flipped and finished in the oven. Even the kids enjoyed it. Served on pitas w/ lettuce and Trader Joe's Tadziki sauce.

Black Forest Dump Cake II

Definitely recommend cutting in the butter like with a pie crust / biscuit recipe. The 45 min at 375 was way excessive for me. It was done in about 30 min. I'm disappointed it tastes a little burnt b/c I wasn't sure how long to leave it (toothpick doesn't seem to work w/ a dumper).

Tomatillo Salsa Verde

We used five medium cloves of garlic to give it some extra zip, which was a good idea. We used about 1" of a 3" chile pepper (not sure of variety) and it was plenty hot, probably "hot" by grocery store standards, medium by TX standards. I almost never cook w/ chiles, so I tasted it before I put it in. Whew! I'm glad I only used 1".

These were pretty good, but too labor intensive to get a higher review. If you make them, toast the walnuts before baking. Note: this is more like a brownie, so don't sweat that you're not adding eggs, etc.

I think 10x15 jelly roll pan is key. 12 graham crackers fit EXACTLY into the bottom, making a perfect surface to spread the topping. After they cool a bit, you can lift the foil out to help you separate the cookies.

Peanut Butter and Chocolate Candy Cake

I love how easy this recipe is. I usually have tips after making, but not for this one. I made as a two-layer cake per my daughter's birthday request. Since this works best when you put the peanut butter and chocolate chips on warm cake, I had to pry the cake out of the pans before it was completely cool. I could use some tips on that (I did grease and flour pans). FYI - when you make and serve from a 10x15 jelly roll pan, it's EASY and delicious.
