Spanish-Style Quinoa

So good! I've made this recipe at least 5 times. The quinoa is always a little bit more watery than I'm used to, but the flavor makes up for it, though I always add more spices. I also add corn kernels and a bean, like garbanzos, to make this a full meal.

Veggie Lasagna Florentine

So good! I brought this to a work potluck, and everyone asked for the recipe. Most people didn't even notice it was vegetarian. I added some extra black pepper and chili flakes to the sauce to an extra kick. Will be making this again next week!

Lemon Cream Cupcakes

I made a test batch of these cupcakes (10 servings) today. They are flavorful and moist, but still a bit crunchy on the top, which I love. Be warned, the batter is THICK. You'll probably want to use an ice cream scoop to get uniform cupcakes. Mine looked a bit haphazard. Didn't try to frosting - these are plenty good on their own, but perhaps not a great choice for children.

Chocolate Cupcakes

I baked a mini batch of these cupcakes (8 servings) following the recipe as closely as I could. My batter was a little bit runny, but the cupcakes baked beautifully. The cupcakes were moist, but not very chocolatey. I don't think I'll be making these again.

Fluffy Whole Wheat Biscuits

"Fluffy" and "Whole Wheat" do not always belong in the same sentence, but here they do! I live near the ocean so I had to adjust the milk down to just over 2/3 c, added by tablespoonfuls.

Peanut Butter and Pumpkin Dog Treats

My standard dachshund (pictured!) loves these treats! I've also given them as gifts to friends who have big and little dogs, who reportedly also enjoyed the treats. Don't know if they were just being polite, but one of the great things about making your own treats is that people think it's hard. I've made these 4 times. I'm trying to keep my wiener dog slim, so I did not add extra peanut butter. I omitted the salt and the cinnamon. I also used egg whites instead of a whole egg. I did add some flax seeds (about 1/3 cup, ground or whole) and some quick oats, which helped absorb extra water from the mashed pumpkin I used (I steamed mine). I've also substituted apple sauce for the pumpkin. I had to add more flour to compensate for the extra moisture, but the resulting treats were just as well received. You could probably also use blueberries, spinach, and carrots. Just be careful of baking time, as some fruits have higher sugar content and will brown/burn faster. Pizza cutter tip was great! I have also used tiny, tiny aspic cutters to create cute shapes for gifting batches.

Winter Lentil Vegetable Soup

This is a solid recipe for a healthy and economical stew. To me, it was good, but not delicious. For just a little bit more effort, you can make what I consider to be pretty delicious lentil soup. I really like "Slow Cooker Lentil and Ham Soup," by queendiva1. Of course, the soup would no longer be vegetarian. Like others mentioned, the curry in this stew is fantastic. I added the amount called for in the recipe, but if I make this again, I will definitely add more. I would also consider adding hot sauce to stew with the vegetables, as opposed to adding it later just as a condiment. What I didn't enjoy is the canned tomatoes. Everyone's palate is different, but I am realizing that the taste of canned tomatoes is a big turn off for me. If you don't mind tomato skin in your soup, it wouldn't be too hard to chop up some fresh tomatoes to throw in the pot.

Chocolate Chocolate Chip Nut Muffins

Made these last night and they are pretty delicious. If they were healthier, I would make them all the time, but I'll still make them again with some changes. I didn't use nuts, but they probably would have improved texture. I swapped out half the AP flour for white whole wheat and the resulting batch was just slightly tougher than usual muffins. I also cut sugar to 1 cup, though next time I will use probably 3/4 or 1/2 cup. I used egg whites instead of whole egg, because that's what I had at home. Next time, I will use a whole egg. The additional calories and cholesterol per muffin is kind of negligible and would have made for a lighter muffin. My batter came together very watery, more like cake batter than muffin batter. Because of this, the sugar added on top for that usual crunch didn't have the intended effect. Overall, these were tasty muffins that easy to make and quite delicious, but more like dessert than breakfast for me.

Slow Cooker Lentil and Ham Soup

So good. Had a leftover Easter ham so I just threw it in the slow cooker. I didn't have tomato sauce, so I used a few fresh tomatoes roughly chopped and the soup was still really good.
