Maple Bacon Pancake

This was perfect for a quick breakfast for guests! THey all loved it. Extra maple syrup and some butter on the top of each piece was the choice by all.

Cookie Dough Hummus

This is OK, but doesn't taste anything like cookie dough. I added a tsp of brown sugar and molasses to try and get the strong bean taste out. It's palatable on fruit but not by itself.

Bulgur Wheat with Dried Cranberries

Eggplant Snack Sticks

Plain and simpley easy and so delicious! I got my husband to eat these and he can't stand eggplant. Dipped in Sweet Thai Chili Sauce. Will make this again and again!

Beef and Irish Stout Stew

Wow!! Used a whole can of Guinness and used Corned Beef in place of the beef stew meat. Doubled the garlic and tomato paste and added a couple of chopped potatoes. Browned the meat did everything else as recipe states but then I did put it in the crock pot for 5 hours on low.

Muesli Bars I

These have a very good nutty flavor and just 1 is very filling. Instead of sesame seeds, I used 1/4c. of poppy seeds. I used a standard cookie sheet and these came out perfect. I suggest letting them cool in the pan and in the fridge for about and hour before trying to cut. After being in the fridge they were easy to cut and popped right out of the pan.

Chicken and Corn Chili

So very easy to make and such a wonderful flavor this chili has. I did add some red pepper flakes for some added punch and corn chips crushed on the top of each serving. I have made this 3 time now in the past two months!

Peanut Butter Kisses I

These are so light and delicious. Very east to make. I did melt some chocolate chips down and just drizzle the melted cholocate lightly over these cookies. Really feels like you are over indulging!

Slow Cooker Thai Peanut Pork

This was wonderful! I served this on top of a bed of coconut rice and it was just the right combination for the spicey pork. I did double the red pepper flakes and added a cup of water and didn't find it salty at all! It was just to easy. I will make this again and again.

This is a very healthy and simple yet yummy! I love to make this in the mornings before heading to work and then let it rise all day long. I normally divide and make two thin crust pizzas!

Whole Grain Waffles

These have become a Sunday morning favorite in my house! I make a double batch and freeze two to a ziploc so that they can be thrown in the toaster during the weekday mornings. I do add dried cranberries and use all wheat germ, vanilla almond milk and egg beaters.

Jalapeno Popper Spread

So good and so simple to prepare. I took a double batch of this to the Super Bowl party and it was completely gone within 45 mintues. Everyone asked for the recipe after they got a taste of this one!!

Wow, this was really a meal in its self and not just a side dish. I loved the nutty flavoring combined with the ginger! Of course I added fresh garlic to it because I am a garlic fanatic.

Spinach Chicken Enchiladas

MMMMmmmmmmm. These were really good and filling! I like onion so I doubled the amount. I also added diced red peppers, black olives, and a can of black beans. I used whole wheat totillas and my husband and I ate these for dinner and lunch for 3 days! I highly suggest topping each one with fresh salsa.

Black Bean Brownies

These were so delicious. I doubled the amount of instant coffee, used egg beaters, doubled the cocoa powder and added baking powder. I then put a simple Irish Cream frosting on the top. Took them to the Super Bowl party and everyone was commenting how good they were.....even the men. When I told them that they were made with black beans and no flour no one believed me!

Southwestern Chicken and White Bean Soup

Wonderful, hearty, and healthy. I added the cilantro for the entire cooking time and did also double the chicken broth. Each serving was topped off with tortilla chips and shredded cheddar cheese. My family loved this.

Whole Wheat Blueberry Pancakes

These are so good you would never know that they are actually healthy for you. I did add half of a mashed banana and cinnamon and nutmeg to give it some umph. I used Kirkland Signature Egg Starts instead of real eggs and it lowered the calories even more on this healthy breakfast.

Turkey Sausage Breakfast

This was very tasty but I did add my own touch to it and just used this recipe as a base. I added a half a loaf of French Bread cut up, diced green and red peppers, and doubled the eggs to 8. I also added a little minced garlic and other spices. Came out really good. My family ate the entire on Christmas!
