BBQ Pulled Pork Pizza

This was a great way to use up leftover pulled pork! I used a crock pot and cooked 2 lb pork butt with 1 jar of Trader Joe's Bold and Spicy bbq sauce for sandwiches. I used the leftovers for this and added shredded cheese and cilantro. No chipotle powder, so I used garlic powder instead.

Whole Wheat Blueberry Muffins

I used honey instead of sugar, coconut oil instead of vegetable oil, and frozen blueberries instead of fresh, because they hold up in the batter rather than breaking apart. I send my toddler off to daycare with healthier versions of muffins all the time, and these look and smell great!

Banana Crumb Muffins

Really quick and simple. I made these a little healthier by using mostly whole wheat flour and used real maple syrup and honey instead of sugar. Very moist ad yummy!

Amazing Slow Cooker Chocolate Cake

Will not make again. Some parts were hard and chewy and others were mushy. When I turned the pot upside down to get the cake out it broke into pieces. Didn't taste great either.

Saucy Beef and Vegetable Casserole

I used Campbell's "All Natural Tomato Basil Soup" instead of condensed because I avoid high fructose corn syrup, added peas and carrots to the vegetables. Reminded me a lot of an American version of Shepherd's Pie but bread topping instead of mashed potatoes.

Seminary Muffins

I made these to change up my toddlers usual breakfast of oatmeal at daycare. A few adjustments: 1/2 c flour and 1/2 c whole wheat flour, 1 c blueberries instead of chocolate chips and walnuts. Very moist and flavorful! Very fast to make too!

Mexican Casserole

Lots of easy changes made this great: saute 1 onion, 1 clove of garlic, 1/2 green pepper before adding chicken. Add green chiles and extra salsa. I took some others advice by omitting water but leaving juice of beans and corn in-too much liquid, so next time I'll drain the corn. Top with sour cream and guacamole. Served with green salad, refried beans, and corn bread.

Brown Rice and Black Bean Casserole

I made this mainly for my one-year-old who eats like a bird, so I am always looking for recipes that include the most amount of food groups. I doubled the carrots, zucchini, onion and brown rice and was able to freeze half for future meals for her. As for my husband and I, it was very bland, so we each added salsa on top. Would make again, but should be served as a side because it's not very exciting.

Make-Ahead Vegetarian Moroccan Stew

The spices were very off-putting. It reminded me of mulled cider, not a good compliment for vegetables. I would re-make this soup again because it is so healthy, but I will use simple salt and pepper instead.

Garlic Cheddar Chicken

I made this for the first time when a friend had a baby. It was so easy to make, looks and smells amazing. I have since made it a few times for my husband and I. This is a foolproof recipe, needs no changes, and anything tastes good on the side. Twice I have made a broccoli, rice and cheese casserole on this website on the side-super yummy meal!!! Not the healthiest but who cares?!

Chicken Suiza Cornbread Bake

I didn't read the recipe carefully and accidentally combined all ingredients instead of separating out the cornbread from the rest, but it turned out perfect by doing that. The cornbread was cooked throughout. Since many complained that the cornbread can be soupy unless cooked separately, this is the perfect solution and saves on cooking time.

To Die For Blueberry Muffins

I have made these so many times and it is so easy and delicious. All of my girlfriends wanted the recipe after I took them to a brunch. These are all ingredients you already have in your pantry, so just buy blueberries!

Double Tomato Bruschetta

Great, simple dish. Took it to a weekly girls gathering. The only tweak I may make is one less clove of garlic. I love garlic, but in a social setting heavy garlic breath isn't the best. The best part of this dish is how beautiful they look!

Easy Mexican Casserole

I made several easy changes to make this both heartier and healthier. Instead of ground beef I use white meat ground turkey. Serve the sour cream on the side instead of baked in (I don't like how sour cream bakes). I saute an onion and various peppers to add as a layer of the dish. I also like to add jalapenos and green chiles. Using these methods makes it a one-dish meal complete with protein and veggies! Heats up great for easy work lunches too.

Chili Relleno Casserole

Very yummy and easy! I added shredded rotisserie chicken to make it more of a complete meal. Serve with salsa, sour cream and guacamole for toppings. The measurements weren't right...needed more green chiles.

Overnight Blueberry French Toast

Tasty, but don't pour the sauce over the french toast. It became a soppy mess and I had to throw the leftovers out. Next time I would just put it on the side. I also think I will melt and spread the cream cheese out, because I didn't like getting chunks of it in a bite.

Fettuccine with Sweet Pepper-Cayenne Sauce

Does have a kick, which I like, but was extremely soupy, even after cutting back to only 1/2 cup of broth. I added mushrooms and half an onion for more veggies. Not much flavor here.
