Pumpkin Chocolate Chip Muffins

Reviewed: Oct. 11, 2006
Made with white chocolate chips (doubled) - YUM! Subbed applesauce for 1/2 the oil and you'd never know it. Great recipe to satisfy my October first-freeze-of-the-year-night craving! My house smells awesome - thanks for sharing!

Beer Battered Fried Vegetables

Excellent - best fried zucchini I've EVER made, and I've tried many a beer batter and breading recipe. BF loved it, too. This is a serious keeper...Thanks much for sharing this one!

Mexican Corn

Reviewed: Aug. 24, 2006
This rocks - I only had 4 jalepenos at home so I added a small truckload of cayenne pepper. Excellent, and good added to noodles the next day for a tuna-mex casserole. Trying with jalep's and poblanos tonight (jalep's don't hang around long enough in this house, even from the garden). I've never had anything like this at a Mexican joint or in Mexico, but the taste is definetely authentic. Thanks much for sharing!

Persian Cucumber Yogurt (Maast-o Khiar)

Reviewed: Aug. 20, 2006
This is one of the VERY few ways I will eat cucumber, or yogurt, for that matter. Great with falafel breaded chicken, and with fat free yogurt it's an awesome healthy substitute for tarter sauce. A dash of sesame oil gives it a tahini taste, too. Thanks for sharing!

Morelos Salsa Verde

Reviewed: Jul. 1, 2006
Update - still make this a couple of times a month and know it will be a hit at my SuperBowl party - thanks again for this true keeper! ... Excellent and authentic! I added a bit of cilantro and a small onion (humoring the backseat cook bf: "salsa w/o onion?!"), and it looked as good as it tasted. Next time I may use serranos, etc. to add some heat, depending on the company. Thanks very much for sharing!

Kidney Bean Salad

Reviewed: Jul. 29, 2005
Out of this world! I JUST made this - it hasn't even chilled yet and I can't keep my fork out of it. I couldn't decide between bean salad or corn salad, so I made this and added a 15oz can of drained sweet corn (I tripled the original recipie first - I had a 52oz can of kidney beans). Also subbed green onion for regular (had 'em), and chopped uo a dill pickle instead of sweet relish. I'm a goof about altering recipies (not always with good results), but this one surely doesn't need goofing with. Thank you sooooooo much for sharing this!! My new favorite salad!

Easy Dump Cake

Reviewed: Feb. 28, 2005
I'm not a good baker (not even a tolerable one), but this recipe was awesome! My hubby was bugging me for a sheet cake, and I made this with devil's food cake mix & chocolate pudding in a 9x13 pan. Moist as heck, and absolutely the best thing I've ever baked - that's not saying much, but I REALLY appreciate the recipe; it's awesome!!!

Tangy Slow Cooker Pork Roast

Reviewed: Dec. 27, 2004
I don't eat meat and never tasted this, but I served it for Christmas dinner and it was a huge hit! I did triple the sauce and used beef broth instead of water. It was falling apart and MOIST even though it cooked for about 10 hours (just under 3 lbs) due to a lack of planning on my part. Everyone loved this, and my hubby complimentd the vegetarian chef!

Cheesy Sweet and Savory Spuds

Reviewed: Dec. 27, 2004
YUM! I made these a few hours in advance and heated at 350 for about 45 minutes prior to serving. They were excellent! I mixed in the cheese instead of topping it. I'm not a huge fan of adding sweetness to anything that's not a desert (or egg salad), but these were great, and everyone at Christmas dinner loved them! Thanks!

Broccoli and Stuffing Casserole

Reviewed: Dec. 26, 2004
This was super good, and the only reason I didn't give it 5 stars was the moisture content (or lack thereof). I added 1/2 cup sour cream at the start in addition to the mayo, and had to add approx. 1/4 cup half and half and 1/2 cup milk while baking (I stirred it up to distribute the moisture). Otherwise, the taste is awesome and it went great with Christmas dinner. I'll be making this on a regular basis. Thanks for sharing!

Easy Mashed Potato and Roasted Vegetable Enchiladas

Reviewed: Dec. 1, 2004
This is awesome! I've had potato enchiladas at Mexican restaurants but was always afraid to try them at home. I used less veggies and mashed potatoes than called for, omitted carrot (had none), added onion and green pepper (roasted). Also added cumin to veggies before roasting (I mess with every recipe I get my hands on - It's nothing personal). Hubby loved it, as well. VERY good with refried beans, sour cream & Chi Chi's salsa (my fave). THANK YOU for sharing this!!

Pizza Dough II

Reviewed: Oct. 20, 2004
I'm a decent cook and not a very good baker, but this recipie is a keeper. I've used up to 3 cups whole wheat flour and it's awesome. Freezes great and easy to make. I love to top it with pizza sauce, eggplant marinated in balsamic vinegar and provolove & bake in a 9x13 glass dish. YUM!

Cold Crawfish Dip

Reviewed: Oct. 20, 2004
YUM! This turned out great. I suppose you could chop or shred the tails for a less lumpy consistency, but I personally LOVE a big chunk of crawdaddy on my cracker. This is a keeper...Thanks for sharing!

Baked Seafood Au Gratin

Reviewed: Oct. 20, 2004
Hmmmm...lemme think....um...AWESOME! This was outstanding. I subbed tilapia for flounder (had on hand) and crawfish tails for the crab (just love crawfish), a shredded cheese blend for the sharp cheddar, and 1.5 cups heavy cream for the milk, since other reviewers mentioned that it was runny. This reminded me of something you'd order at Red Lobster, maybe over pasta. I served with garlic breadsticks, and even the hubby, who hates anything even remotely "fishy", loved it. Added more onion and pepper to the left overs, rolled into tortillas and made enchiladas the next night. Thanks SO much for sharing this!

California Grilled Veggie Sandwich

Reviewed: Jul. 23, 2004
I made a lot of changes to this to accomodate stuff I had on hand, but I've tried to grill veggie sandwiches before and they never turned out this good! I used provolone instead of feta, bakery hot dog buns instead of focaccia, and wasabi GourMayo as a time saver (and to use it up since I don't think it's very good on much else). It must be brushing the veggies with oil, and grilling the bread, but these taste like something you'd order at a restaurant! Even the meat & potatoes hubby loved them! Thank you for sharing! I'm finally a vegetarian grill master!
