Cake Balls

A rare failure after years of baking! The inside was a weird consistancy, the taste was overly sweet, and the process is time consuming and expensive (it takes a lot of chocolate to dip all those balls). However, the ones I did before I gave up were very pretty and looked like they came out of a professional bakery.

Cake Mix Cookies VIII

These are the least expensive, fastest, easiest, tastiest cookies to make. Thanks to other reviewers, I tweaked the recipe a little and now think of them as "One Cookies"...One chocolate cake mix, one stick of melted butter, one egg, one tsp. of vanilla, one handful of chocolate chips. So easy to clean up...One mixing bowl, one cereal bowl (for melting the butter), and one spoon. I was done mixing before the oven was done pre-heating. And there is no need to drag out the electric mixer. My new oven is very accurate (yay!) and they bake at 350 for 9 minutes.

The Best Parmesan Chicken Bake

This was easy to throw together and delicious. I didn't use the pepper flakes (don't like) or the basil (didn't have) and I messed up the order of the cheese and sauce layers, but this recipe is pretty much goof proof and very forgiving. Forget the marinara and just use whatever favorite flavor of sauce in a jar you have on hand. Adjust your cooking time to the size of your chicken breasts, and if you cook too long, the croutons just get more crunchy. Don't expect "gourmet", just tasty, fast, and only one dirty dish.

Mom's Zucchini Bread

This is a great recipe. It is so moist. The only thing I do different to the actual written part of the recipe is to just about liquify the zucchini in my little electric chopper instead of just grating it. Nobody will ever know there is zucchini in it if you don't tell them. In addition, I grease and sugar (instead of flour) the pan before pouring in the batter so it comes out extra sweet and slightly crunchy, and I sprinkle on a streusel topping (but that's my preference, the recipe is excellant as is).
