Spanish Flan

This was delicious but I had difficulty getting it out of the pan. I did put it in a iron skillet with water for about 5-7 minutes but it required longer. I had to take it to a party and it cracked when I took it out. However,it was delicious and I did not take any home.

A great simple recipe. I adapted for ingredients on hand. I added sliced strawberries and feta cheese and used walnuts that I caramelized in sugar. Yum.

Zinfandel Salad Or Slaw Dressing

Easy, delicious and infinitely flexible. I used apple cider vinegar and the cabernet/merlot wine I had and it was delicious. I imagine rice vinegar would make it a little sweeter. This would be great on a salad with blue cheese or Gorgonzola. I doubled the recipe and used in Cole Slaw.This is a keeper!

Slow Cooker Chicken Taco Soup

For being easy, delicious and healthy. I made this on the stove top and sauteed the onion and garlic with a little cumin. Then after all of the ingredients were dumped in (I used 32 oz box of chicken bouillon), instead of chicken, I floated 6 frozen Boca burgers in the broth until they were soft. (Microwaving them makes them hard) When soft, I pulled them out and diced them up. For those following weight watchers, I calculated this to be only 2 points per cup before adding cheese or sour cream. Yum.

Avocado Shrimp Ceviche-Estillo Sarita

This is a wonderful, easy recipe. I make it for Christmas every year. A few suggestions: To save a lot of time, buy fresh frozen shrimp that have been shelled and deveined. Also, the smaller you chop the shrimp, the faster it will "cook".

Greek Pasta with Tomatoes and White Beans

A great, fast, satisfying, weight watchers dinner. I used 1 cup whole wheat pasta and 4 T grated Asiago cheese instead of the Feta and I calculated that this was only 6 points.

Molasses Cookies

I used butter instead of margarine and even though I chilled the dough they spread out and got quite thin. However, they were awesome! Kind of like a chewy, crispy ginger snap.
