2-Step Inside-Out Chicken Pot Pie

Very easy and good. Instead of making biscuit I put every thing in a cassarole dish and poured bisquick mix over it and baked it for 35 min. Once you do that it is the same recipe that is on the back of the bisquick box. Will be making again

Elaine's Sweet and Tangy Loose Beef BBQ

Took much longer to cook to get to the shredding point, but I figured it would, and it doesn't need to be cooked as long after you add everything. I cooked the roast until it was ready to pull apart and then stuck the crockpot in the fridge over night. The next day I removed all the fat that had hardend and turned the crockpot back on,shredded the beef, added the ingrediants and cooked the rest of the way. It was very tasty. You don't have to be precise on the measurments, just add what you like to get the desired taste. I will add lots more spice to it when we are ready to eat it after taking some out for the kids and those that don't like it hot. I like to use chili paste. Didn't use as much ketchup.

All-in-One Casserole

Wow-what a surprise. I don't (didn't) even like sweet potatoes but I loved this dish. My husband loved it as well. The only changes I made was that I added some red onion to it about half way through cooking in the oven and I omitted the mushrooms, although I am sure my husband would have loved to have had them. Also, it only took about 20-25 min in the oven. Maybe I cut the potatoes pieces smaller-I don't know. But just as long as you watch it and stir it up every 7-10 min it turns out great! It also may have made a diff that I cooked it in a cast iron skillet that I just transferred to the oven. However you do it, you are sure to love it. I will for sure make this again (soon) You could easily scale it to any serving amount you want. It would be a great pot luck dish as well. You should try this!

Moong Dal

I spoke to my Indian friend and she said that you don't usually use jalapeno in dahl, you can add serrano peppers. Also the split peas will take much longer to cook about 1 hour or so and you will have to keep adding water. You can also cook them in a pressure cooker and that will shorten the cooking time. You don't have to use the Asafoetida. I also thought that adding a little garam masala at the end is good.

Moong Dal with Spinach

I made something similar after talking to my indian friend. I used serrano peppers instead of chile and I couln't find the curry leaves and didn't want the asafoetida. But very good and will make again my way. I served it over basmati rice and ghee.

3-Cheese Stromboli

I used contadina pizza squeeze that my neighbor gave me when she moved. I served it with black olives. We had it for lunch and really liked it. I think it would be even better with pepperoni and olives in it. I will make it again. Good easy lunch for the family. I think next time I will try making my own sauce instead of store bought.

Brussels Sprouts Stir Fry

I used a green pepper because that is what I had on hand. It was good. My husband said that he likes plain brussel sprouts just as much. But he would like to have them again. I think they would taste good with some garlic too. The potatoes needed to be cooked less or maybe I should have cut them into bigger chunks. I will make again for sure.

Pork Medallions with Sauteed Apples

yummy. My husband and I loved it. I made this to serve my husband, 4 year old, 2 year old and myself. We had leftover pork of course but no extra apple. My kids didn't like the apple topping for some reason. We will make again.

Balsamic Vinegar and Olive Oil Dressing

Yummy. I used dried herbs and made in a smaller one time use batch and it came out fine. Good basic dressing. It did the job since we were all out of dressing. Will make again for sure.

Whole Wheat Brownie Mix

Yummy!!! These are great brownies and the kids, the husband and the neighbors all agree. I had to cook them a little longer about 26 min or so. Just watch carefully. I left out the nuts. I don't like the fact that it has shortening in it though(don't like the trans fat). That was the first time I made them. The second time I used butter instead of shortening so I got rid of the trans fat but you do get more saturated fat (I used a little more butter then what it called for in shortening because butter has more water)and I used evaporated cane juice instead of sugar. The third time I made them I used butter flavored shortening and 2 tsp of ground flax seed with 1/2 cup water instead of eggs(that way you get rid of a lot of calories and all the cholesterol and add fiber) and half splenda/half sugar. They turned out great. Can't wait to make them again. I love the fact that it makes a mix that you can get several batches out of.

Soft Whole Wheat Sugar Cookies

wow wow wow! What a surprise! These are very very yummy. My girls ( 5 and 2) love them! I love them and my husband loves them! Can't believe they are whole wheat. I didn't have any apple pie spice so I used a dash of cinnamon, nutmeg and allspice. The dough was a little thick so I added just a bit more milk and it was perfect. I also left out the mini candies ( don't need them) Next time I will try making with some applesauce in place of the egg and use part splenda. These will be something we will have on a regular basis. You will not be disappointed.

Honey Mustard Chicken

I cooked the chicken whole in a george forman roaster. I seasoned the chicken with the paprika, pepper and curry-then glazed it with the sauce several times during the cooking proccess. It was very very yummy! Husband loved it! 1 out of 2 kids devoured it, the other one wasn't to interested in eating but she is only 2 1/2. Will make this again for sure. I will most likely try it with skinless breast next time.

Layered Nacho Bake

Yummy. I did make a few changes. I used ground turkey and only had one can of refried beans so I used that and 2 cups of cooked brown rice and both cheddar and mozzarella. I think it would be good the original way as well. I topped with tomatoes and black olives and sour cream. Tasty lunch
