Texas Enchilada Sauce

Reviewed: May 12, 2010
I thought it should get a 5 stars but my husband said it was good but not great. I did however follow some advice of some other reviewers and left out the bell pepper because I didn't have it. I also used a 14 oz can of diced tomatoes and 3 fresh roma tomatoes and blended them up for a thinner sauce instead of the 24 oz can of crushed tomatoes it called for. I also blended the onion after cooking it. My husbands main thing with it was that even after blending it, it was still a bit thicker of a sauce than we usually buy. I think it is worth a try. I loved it. I am sure it would be good with the bell pepper as well. I will make again for sure.

Balsamic Vinegar and Olive Oil Dressing

Reviewed: Apr. 27, 2010
Yummy. I used dried herbs and made in a smaller one time use batch and it came out fine. Good basic dressing. It did the job since we were all out of dressing. Will make again for sure.

Layered Nacho Bake

Reviewed: Apr. 20, 2010
Yummy. I did make a few changes. I used ground turkey and only had one can of refried beans so I used that and 2 cups of cooked brown rice and both cheddar and mozzarella. I think it would be good the original way as well. I topped with tomatoes and black olives and sour cream. Tasty lunch

Oklahoma Brisket

Reviewed: Apr. 19, 2010
Yummy!Very tender and tasty. The sauce is really sweet but you could add a little spice if you wanted. Everyone liked it. I will have to make it again. I didn't have apple cider so I just used apple juice and added a little nutmeg and allspice to it.

Butternut Squash Fries

Reviewed: Apr. 19, 2010
flavor was very good. But that was all. Maybe I cut them to thin. They mushed all up. We just ate the mushed up "fries". Don't think I will make these again.

Whole Wheat Brownie Mix

Reviewed: Apr. 18, 2010
Yummy!!! These are great brownies and the kids, the husband and the neighbors all agree. I had to cook them a little longer about 26 min or so. Just watch carefully. I left out the nuts. I don't like the fact that it has shortening in it though(don't like the trans fat). That was the first time I made them. The second time I used butter instead of shortening so I got rid of the trans fat but you do get more saturated fat (I used a little more butter then what it called for in shortening because butter has more water)and I used evaporated cane juice instead of sugar. The third time I made them I used butter flavored shortening and 2 tsp of ground flax seed with 1/2 cup water instead of eggs(that way you get rid of a lot of calories and all the cholesterol and add fiber) and half splenda/half sugar. They turned out great. Can't wait to make them again. I love the fact that it makes a mix that you can get several batches out of.

Bacon Feta Beans

Reviewed: Apr. 15, 2010
My husband and I really enjoyed these. My young girls didn't really eat them very well and they usually like green beans but I think they didn't recognize them! Very yummy. I didn't give it 5 stars because my kids didn't eat much and the fact that you take an otherwise healthy veg and add lots of saturated fat. We will try again maybe next time with turkey bacon like another reviewer said.

Authentic and Easy Shrimp Curry

Reviewed: Apr. 14, 2010
This was good. I didn't have curry leaves so I left them out and I didn't have ginger garlic paste so I used minced garlic and ground ginger like another reviewer said. This isn't spicy so it was perfect for my little ones but you could just add more spice for your own plate. Nice to have a new recipe for shrimp that isn't a pasta dish. I love curries!

Good 100% Whole Wheat Bread

Reviewed: Apr. 10, 2010
I used the oven because I don't have a bread machine. I took the advice of another reviewer. Let it rise for 1 hour and then kneaded it placed it in the loaf pan and shaped it to fit and let rise for about 45 min and then baked. Very happy with it. Simple recipe. It might have to grow on you if you are not used to eating whole wheat but that is what we always eat so we enjoyed it. I will make it again.

Asparagus-Stuffed Chicken Breasts

Reviewed: Apr. 10, 2010
wow wow wow. This dish is amazing!!!!! I too chose to cook it in the oven. My husband gave it a 12 out of 10 so you know it is good. I don't believe it needs as much hollandaise sauce as it calls for though just because all that butter isn't good for you. But it is something that I am going to make again for sure. I will have to serve it at a dinner party. People would be impressed. Very very easy to make.

Whole Wheat Wraps

Reviewed: Apr. 9, 2010
Very good. My little girls loved them plain. I made a small batch of 4 just to find out if anyone would eat them and they all got eaten. I love how easy they are to make but you do have to watch them very closely once they are on the stove. Next time I am going to make tortilla chips with them by seasoning them with sea salt and slicing them into wedges and baking them on a cookie sheet after frying them. I have done that before with store bought tortillas. You can also use cinnamon and sugar instead of sea salt, they are good with fruit salsa. These might be hard to get use to if you are not used to eating whole wheat but in our family that is the only thing we eat.

Marinated Flank Steak

Reviewed: Mar. 30, 2010
very easy and tasty. I didn't use flank but a thinner cut of meat because that is what I had. It was more of a round steak. Would be good on the grill or used for stir fry meat. Will try again

Old-Fashioned Vegetable Soup

Reviewed: Mar. 28, 2010
good but not much to it. Good for a light dinner or lunch. Would be a good base to a beef stew. I think if I make it again I will use less soy sauce and worcestershire because I thought the taste was a little strong.

Amazing Asian Chicken Salad

Reviewed: Mar. 28, 2010
yummy I didn't use any chicken because I didn't have time to cook it that day but it was very good. I am sure it will be even better next time with chicken. I also added some uncooked ramen noodles for some crunch.

2-Step Inside-Out Chicken Pot Pie

Reviewed: Mar. 19, 2010
Very easy and good. Instead of making biscuit I put every thing in a cassarole dish and poured bisquick mix over it and baked it for 35 min. Once you do that it is the same recipe that is on the back of the bisquick box. Will be making again
