Jayme's Cole Slaw

I liked it. It is a little on the strong side but that is how I like things! I like being able to taste it! I did add carrot to it as well. This would be good with any dish.

Orange Ginger Pork Roast

I used pork loin steaks instead. My husband didn't care for the strong orange flavor but that was just a personal pref. I thought the orange and the ginger worked very well together. I nice change to pork

Curried Chicken Triangles

My husband loved them! My girls and I thought they were ok. I think I would like them better with less mayo-I don't really like the stuff. I served it for lunch so I didn't cut the rolls, just left them whole and filled and wrapped. I also used cut up chicken breast-don't buy chicken out of a can!

No Bake Bumpy Peanut Butter Nuggets

My kids and I loved them. I did make a few changes. I didn't have any coconut and used a little apple juice instead of concentrate and added a little honey to half the batch. I added some nutmeg as well as used a little extra cinnamon. You could easily add any extra flavoring or ingredients to it. A little cocoa sprinkled on them would be good as well as adding some crunch on the inside such as grapenuts or crushed nuts(almonds) My girls loved to help make them, a nice no bake treat that is actually good for them but they think it is like a cookie.

Soft Whole Wheat Sugar Cookies

wow wow wow! What a surprise! These are very very yummy. My girls ( 5 and 2) love them! I love them and my husband loves them! Can't believe they are whole wheat. I didn't have any apple pie spice so I used a dash of cinnamon, nutmeg and allspice. The dough was a little thick so I added just a bit more milk and it was perfect. I also left out the mini candies ( don't need them) Next time I will try making with some applesauce in place of the egg and use part splenda. These will be something we will have on a regular basis. You will not be disappointed.

This was good, the whole fam ate it. I think a little more pepperoni would be nice. I agree with some other reviewers, I cooked my pepperoni a little in the microwave so it was crispy and you can drain the grease.

All-in-One Casserole

Wow-what a surprise. I don't (didn't) even like sweet potatoes but I loved this dish. My husband loved it as well. The only changes I made was that I added some red onion to it about half way through cooking in the oven and I omitted the mushrooms, although I am sure my husband would have loved to have had them. Also, it only took about 20-25 min in the oven. Maybe I cut the potatoes pieces smaller-I don't know. But just as long as you watch it and stir it up every 7-10 min it turns out great! It also may have made a diff that I cooked it in a cast iron skillet that I just transferred to the oven. However you do it, you are sure to love it. I will for sure make this again (soon) You could easily scale it to any serving amount you want. It would be a great pot luck dish as well. You should try this!

Almost No Fat Banana Bread

I did make a few changes. I used whole wheat flour and just under 1/2 cup sugar and the rest splenda. Like some other reviewers said I used 1/2 tsp nutmeg and about 1 tsp vanilla. It is a very heavy bread but has a very yummy flavor. My 5 year old loved it as well. It would be good with maybe a little extra banana as well.

Elaine's Sweet and Tangy Loose Beef BBQ

Took much longer to cook to get to the shredding point, but I figured it would, and it doesn't need to be cooked as long after you add everything. I cooked the roast until it was ready to pull apart and then stuck the crockpot in the fridge over night. The next day I removed all the fat that had hardend and turned the crockpot back on,shredded the beef, added the ingrediants and cooked the rest of the way. It was very tasty. You don't have to be precise on the measurments, just add what you like to get the desired taste. I will add lots more spice to it when we are ready to eat it after taking some out for the kids and those that don't like it hot. I like to use chili paste. Didn't use as much ketchup.

Gumbo Style Chicken Creole

The only thing I changed was using crushed red pepper flakes instead of hot pepper sauce. I served the kids up first before adding the spice. My husband said that it would be even better with chopped zuccini added. He gave it an 8 out of 10. I will make this again for sure. I served it over rice.

3-Cheese Stromboli

I used contadina pizza squeeze that my neighbor gave me when she moved. I served it with black olives. We had it for lunch and really liked it. I think it would be even better with pepperoni and olives in it. I will make it again. Good easy lunch for the family. I think next time I will try making my own sauce instead of store bought.

Honey Mustard Chicken

I cooked the chicken whole in a george forman roaster. I seasoned the chicken with the paprika, pepper and curry-then glazed it with the sauce several times during the cooking proccess. It was very very yummy! Husband loved it! 1 out of 2 kids devoured it, the other one wasn't to interested in eating but she is only 2 1/2. Will make this again for sure. I will most likely try it with skinless breast next time.

Brussels Sprouts Stir Fry

I used a green pepper because that is what I had on hand. It was good. My husband said that he likes plain brussel sprouts just as much. But he would like to have them again. I think they would taste good with some garlic too. The potatoes needed to be cooked less or maybe I should have cut them into bigger chunks. I will make again for sure.

Garbanzo Stir-Fry

I added a little onion, used fresh basil but dried oregano because that is all I had, just about 1/4 cup mushrooms and doubled the garlic(minced garlic not fresh). I served it over brown rice and added a little feta and crushed red pepper like some other reviewers said. Served it for lunch to husband, 4 year old and 2 year old and myself. My 2 year old didn't like it but the rest of us did

Beef and Bean Chimichangas

I used ground turkey and homemade taco seasoning and a little tomato paste(sauce would be better) and omitted the corn(I didn't have any) I baked in a cassarole dish and flipped them over to brown on both sides. I didn't measure out the onion or bell pepper. Just used the whole pepper and added lots of onion. I first cooked the onion in butter to soften them a little, then added the bell pepper and let them soften just a bit and added the ground turkey and cooked through,then added seasonings with a little water. I froze the extra ones wrapped individually. Husband and kids and I thought they were great! Cant wait to have them again.
