Easy Beer Bread Mix

Great beer bread! As other reviewers mentioned, in place of self rising flour, I used a total of 1 TB + 1.5 tsp baking powder. I added a total of 1tsp salt and I increased the brown sugar to 1/3 c. Fun bread that tastes different depending on what kind of beer you put in. Yum!

Honey Curried Roasted Chicken and Vegetables

Very good! I made it with boneless skinless breasts (salt and peppered) because that is what I had on hand. I cooked it at 400 for 35 minutes. Baked for 20 minutes, put on the sauce, and then cooked for another 15. Next time, I think I will cook it for the same time but at 375. The chicken was a little dry. As per other's suggestions, I used what veggies I had on hand and did not precook the veggies. I used zucchini, carrots, celery, cherry tomatoes, 2 cloves of garlic, olive oil, and a bit of salt and pepper. Very good flavor and it was great with the veggies. It was a bit spicy. I will definitely make it again.

Oriental Cold Noodle Salad

Spicy and delicious! I love spicy food but for the average person, I would probably half it. I made it a meal by adding ground turkey. I used brown rice pasta, added edamame, and used 1tablesoon of honey in place of the sugar. So good!!

Peppery Shrimp and Rice

Good solid keeper. I cooked the veggies longer than it said (therefore I didn't cook it for an additional 20 min after adding the tomato sauce and chicken stalk) and used mushrooms in place of peppers. I'm not a pepper fan. I added asian garlic chili sauce for the vague "chili sauce". We really liked the spiciness of it. Lastly, we only cooked 2 cups of rice and it was plenty for 4 people.

Split Pea Soup

Love this recipe!! I did the quicker "soaking" of the peas. I took all of the good ham meat off of the bone before adding it to my chicken stalk and peas. I saved the ham pieces until the very end of cooking when I added it to the soup, just to warm it up. The first time I made pea soup, I had it in the whole time and it gets so dry! I followed some reviewers suggestions by adding 2 cups of each celery, carrots, and potatoes. I did not add marjoram because I don't have any so I added some thyme and lemon pepper instead. After adding everything, I probably cooked it for 2 more hours because I like my pea soup very thick. I serve it with fresh lemon to squeeze on top and lemon pepper. So Yummy!

Denise's Peanut Chicken

My husband loves this dish although I made it my own. I took other reviewers advise and added 3/4 C creamy PB to the sauce. I omitted the sugar, cayenne, cornstarch, and peanuts. We love spicy foods so I add sirracha. I am not a fan of peppers, so I steamed (in the microwave) broccoli. We served this over rice and it is oh so good!

Greek Chicken Burgers with Feta

Very good! I followed the recipe except I add dried herbs in place of fresh. We put Trader Joe's tzatziki on top! Sometimes I serve this without the bun and have some roasted veggies on the side. Yummy!

Beefy Baked Ravioli

Great alternative to boiling the ravioli and very easy. I just threw in whatever I had. I put a layer of sauce then a layer of ravioli, more sauce fresh diced tomatoes, cheese, and 1 diced chicken sausage and repeated the layer and added a bit of feta cheese I had left. I used a whole package of ravioli too. I didn't measure anything, I just threw it all together, baked it for 30 min, and enjoyed a tasty dish!

Hummus Pizza

Yum! I used Trader Joe's wheat pizza dough and their spicy hummus. I would recommend getting a hummus with some type of extra flavor because the flavor of the pizza comes from the hummus. As for toppings, I added chopped up spinach, tomatoes, red onions, small broken up pieces of broccoli, and reduced fat cheese. I followed the cooking direction on the pizza dough's package. It came out great and it is a fun alternative to regular pizza.

Mediterranean Quinoa Salad

Very good dressing to finish the quinoa. I used the veggies I had on hand; red onions, mushrooms, shredded broccoli and carrots, and sundried tomatoes. I didn't have any of the fresh herbs so I used dried and it still came out great! I think the balsamic/lemon/olive oil really make it special! Don't forget to soak your quinoa before you cook it!

French Breakfast Muffins

They are okay, not great...I think it is a good base. If I try to make it again, I will add fresh blueberries. The changes I made to the recipe were adding 1/4t vanilla and I only used 1T butter to top the muffins. It was plenty and I would cut the cinnamon/sugar in half. It is way too much! I have a regular muffin pan and it did make 12. I sprayed the muffin pan and the spoon I used to fill the pan. Very easy.

Terrific Turkey Chili

My husband and I loved it!!! This is a keeper! Unlike some reviewers, I don't like beans so I was very happy to find a recipe without any while still being hearty. For the most part, I made the recipe as is, however, I used olive oil in place of vegetable oil, I didn't have coriander so I used a T of pasta seasoning, I used low sodium beef broth, I found 2 zucchini was plenty (and I cut them up a bit smaller then the recipe called for), no bell pepper (because I don't like them), and I add a can of unsalted corn instead. It is so yummy!!! You must try it!
