Raspberry Vinaigrette Dressing

I just made this and started by mixing the sugar and vinegar together a little at a time to get the right taste. I'm sure I used nowhere near the half cup of sugar that it calls for. I did not have Dijon mustard so used spicy brown; it did not hurt the flavor. I also added about an eighth of a teaspoon onion powder because I like onion powder in all my vinaigrettes. The raspberry vinegar I used was my own homemade. This is a yummy recipe and it's definitely a keeper.

Waffle Iron Cornbread

Loved this! In the summer here in the desert, the last thing I want to do is crank up the oven, but we so desperately needed cornbread to go with our posole last night. I didn't have buttermilk, so I started with a about 3 tablespoons of greek yogurt and then added the milk to the 1.5 cup mark. Great cornbread idea without heating up the whole house. Now where's the biscuit version?! :)

Wine and Dijon Marinated Pork Loin

Wonderful! The marinade seemed a bit tart to me so I did add a little bit of sugar to balance the acidic ingredients. I don't really remember how much I added; I tasted it as I added a little at a time until it just began to cross the line into sweet then stopped. I did also take the advice of previous reviewers and cut back on the salt by about half.

Fish Tacos

Absolutely awesome! I didn't have the capers, but don't think we missed them. Also, I used my deep fryer, and deep fried the leftover batter into litle crumbs which everyone thought was just a nice, tasty touch.
