I didn't think the vinegar was too much at all, as I've read in other reviews. I used rice vinegar and a few shakes of red wine vinegar and it worked beautifully. I'm gluten intolerant, so a piece of tapioca bread ground up finely in the mini chopper easily replaced the saltines. Big chunks of sweet onion were a nice addition to the sauce, and the possibilities are endless as to what could be added (bamboo shoots, carrots, celery, etc.). Great recipe – thanks for sharing!
